Bram Stoker's Dracula -- It's a classic vampire book and is very well-written in diary/journal/letter format.

I'm surprised no one has recommended Anne Rice. She has a whole series of vampire books. They start with Interview with a Vampire, which was made into a movie.

Fred Saberhagen also wrote some vampire books, but they aren't as well known.
