I need a meal on a budget?

I invited an old friend for dinner.I need to impress on a budget.I know he likes fish.Help

  1. Get a really nice piece of white fish -- whatever is on sale.  Catfish is good, but so is ocean perch or whatever.  I don't personally like blue hake, because it's too "meaty" and tough, but whatever.

    Put it on a bed of salt -- kosher is good but plain salt is okay too.  Brush it with butter and/or olive oil, then scatter your favorite herbs on it.  Pop it under the broiler and watch it carefully.  

    You can then make a nice white rice side and a green salad for a simple but delicious meal.


  2. Fish is expensive so first thing is you need to find cheap fish.You don't say where you live?i live by gulf so i gets of fish from boat Capt's.

    talapia might be your best bet.I find they fish if you live far from gulf or water tends to be frozen then unfrozen while it sits in the glass container til its sold.Make sure whatever you get it fresh or get talapia its cheap and in frozen foods..its white fish and tons of people like it.

    I would lay out parchment paper and lay fish in and throw carrots snap peas broccoli w some fresh seasonings..maybe rosemary butter garlic and let bake in oven and all you have to do is throw on the plate and enjoy.No clean up either so it works out nice.

  3. Ramens, or Fish, put some herbs on it while its cooking that you already have in your house. Fresh peas or green beans, whole wheat rice.

I am assuming this is a meal for two.  I will also assume twenty dollars for your budget. get two pieces of salmon one jar of five brothers fettucine alfredo sauce get one pack of fettucine noodles, one bag of ceasear salad and some fresh bread.  this makes a really good looking meal and plates up nicely.

    For the salmon just season it with seasoning salt and pepper. and sautee in a pan with a little oil.   If you have any balsamic vinegar on hand drizzle just a little over it when done cooking.

  5. Tuna Noodle Casserole

    1 can (10 3/4 oz.) Campbell's Cream of Mushroom or 98% Fat Free Cream of Mushroom Soup

    1/2 cup milk

    2 tbsp chopped pimiento (optional)

    1 cup cooked peas

    2 cans (about 6 oz. each) tuna, drained and flaked

    2 cups hot cooked medium egg noodles

    2 tbsp dry bread crumbs

    1 tbsp margarine, melted

    Mix soup, milk, pimiento, peas, tuna and noodles in 1 1/2-qt. casserole. Bake at 400 F for 20 min. or until hot. Stir.

    Mix bread crumbs with margarine and sprinkle on top. Bake 5 min.

    Makes 4 servings

  6. Salmon is really easy to make.

    Place in toaster oven ( on broil), or broiler.

    Salt pepper , 'bout 5 min per side. I always test temp. (150)

    Shrimp is easy as well , melt butter in 13 x 9 pan with several cloves of garlic , and lemon juice, place up to 2 pounds shrimp in pan at 400 degrees for ... 20 min.
