  1. Chewy Peanut Butter Granola Bars

    Ing:

        * 1/2 Cup Brown Sugar

        * 1/2 Cup Light Agave (or light corn syrup)

        * 1/2 Cup Creamy Peanut Butter

        * 3 Cups Peanut Butter Granola (Or any other granola you like)

    Dir:

       1. Lightly grease an 8 x 8 square baking dish.

       2. Place the granola in a large bowl and set aside for now.

       3. In a medium sauce pan, combine the sugar, agave, and peanut butter, and simply cook over medium heat until fully combined and smooth, and bring just to a boil.

       4. Pour the liquid ingredients over the cereal, mix well to fully coat all of the dry granola, and press it evenly into your prepared pan.

       5. Let cool completely before cutting, although you can always speed up this process in the fridge.

       6. Because they are so soft, I might suggest wrapping them individually (for both freshness and ease) and storing them in the fridge.

    Peanut Butter Granola Bars

    Ing:

    4 tablespoons unsalted butter

    1/4 cup honey

    3 cups old-fashioned rolled oats

    1/2 cup slivered almonds

    1/2 cup roughly chopped pecans

    1/4 cup hulled green pumpkin seeds

    1/4 cup unsalted sunflower seeds

    1/2 teaspoon ground cinnamon

    1/4 teaspoon salt

    1 cup raisins

    1/3 cup light brown sugar

    1/2 cup light corn syrup

    1/2 cup creamy peanut butter

    Dir:

    Preheat oven to 325 degrees F. Lightly grease an 8 by 8-inch baking dish and set aside.

    In a small saucepan melt butter with honey over low heat, stirring.

    In a large bowl stir together oats, almonds, pecans, pumpkin seeds, sunflower seeds, cinnamon and salt. Pour butter mixture over oat mixture and stir until combined well.

    On a large baking sheet, spread the granola evenly in a thin layer. Bake, stirring every 5 minutes to keep from sticking or burning, until golden brown and crisp, about 20 minutes. (Do not overcook; the granola will crisp more when cooled.)

    Cool the granola in the pan on top of the stove and stir in the raisins. When the granola is completely cooled, place in a large bowl.

    Combine the brown sugar, corn syrup, and peanut butter in a small saucepan over medium-high heat. Stir constantly until the sugar is dissolved and the mixture is at a boil. Remove from the heat and pour the mixture over the granola, stirring to coat well. Cool slightly and press into the prepared baking dish and let cool completely and harden. Cut the mixture into ten 1 1/4 by 4-inch bars and serve at room temperature. (The bars may be kept in an airtight container at room temperature for up to 1 week.)


  2. 2 tablespoons margarine

    1/3 cup natural peanut butter

    1/3 cup honey

    1/2 teaspoon vanilla

    1/4 teaspoon salt

    3 cups rolled oats

    1/2 cup raisins (optional)

    Begin by melting the margarine and peanut butter together in a 3-quart saucepan. Add the honey, vanilla and salt. Stir the mixture until it is smooth and hot throughout. It doesn’t need to boil. Add the oats. Stir until the oats are completely coated with the sticky gooey peanut butter mixture. It will be chunky. Turn the mixture into an ungreased cookie sheet, or a large 9 by 13-inch pan. Spread the granola out evenly and bake it at 375° for 10 minutes. It will be brown and crispy. Now remove it from the oven and allow it to cool right there in the pan. Break it up into pieces after it is cooled. Transfer the granola to a clean coffee can or sealed canister. Add the raisins, if you are using them, when the granola is cool.
