I need a really good dish for dinner?

ok ok! i lied!

I told some local relitives that i was a really good cook. that i make anything! and it would be awesome! and well... I didnt expect her to set us up for a dinner date.. all of us at her house for dinner! shes making the dessert but i have to bring the main course! dinners tomorrow night... help plz! ( i can buy anything and have a lot of cooking supplies. my sis is a chef)

    I posted this recipe for someone else earlier, but I think it will work well for you too; Just add a tossed salad with it and you are all set.

    SAUSAGE AND PEPPERS PASTA

    1 lb. hot Italian sausage

    1 lb. sweet Italian sausage

    Olive oil

    2 green bell peppers, cubed

    1 red onion, sliced

    1 clove garlic, minced

    4 fresh Italian tomatoes, quartered

    6 lg. mushrooms, sliced

    Salt and pepper to taste

    28 oz. can Italian tomatoes with juice

    1 tsp. cornstarch

    1/4 c. red wine

    12 oz. any kind pasta, cooked

    Grated Parmesan cheese

    Cut sausage into quarters. Brown in olive oil, then remove from pan. In same pan, saute peppers, onion, garlic and fresh tomatoes until limp. Add sausage, mushrooms, salt, pepper and canned tomatoes. Simmer 45 minutes.

    Stir cornstarch into wine with wire whisk, then whip into sauce. Cook another 15 minutes, uncovered, until thickened. Serve over pasta. Top with Parmesan

  2. Stuffed Chicken Breast

    Pounded chicken breast, season with salt & pepper

    mix together in a bowl

    fresh spinach 1 bag tear into bite size pieces

    bread crumbs

    garlic powder

    2 eggs

    parmeasan cheese

    put mixture in each chicken breast, fold in half, close with a tooth pick

    Brown stuffed chicken breast in olive oil

    place in casserole dish & bake 45 - 60 min.

    make hollendaise sauce Knorr is what I use, but I add lemon juice to it.

    serve with rice, salad & garlic bread

  3. maybe pasta with a salad...and for a appitizer you could do a 7 layer bean dip...its really good with chips and really easy and fast to make

  4. Chicken (or tofu) lettuce wraps, like the ones at PF changs and peiwei, are really easy to make but still look sophisticated.

  5. How about a good lasanga..with garlic bread, and a salad? or a roast cooked all day, with patatoes and roasted carrots?

  6. Stick with something simple and fresh - you'll come across as elegant.  

    I'd go with fish.  A lot of people are afraid of cooking with fish, and it doesn't have that 'I'm a beginner' feeling like lasagna or pizza does, or that 'I'm trying really hard' feeling like stuffed chicken b*****s always do.  

    Fresh fish, if you cook it in a foil or parchment bag, is nearly impossible to overcook or undercook.  It's also beautiful.  

    Parchment-baked Lemon-dill Filets

    Buy one fillet for each person of salmon, trout or tilapia.  

    Mix together:

    - 2 tsp minced garlic or garlic puree

    - 1 tsp lemon zest

    - 2 tsp lemon juice

    - 2 tbsp finely chopped dill

    - 1 tbsp mayonnaise

    - 1 tsp cracked pepper

    Smear it all over the top of each fillet.  Wrap each fillet in a bag of foil, or fold parchment paper into a bag.  Set the bags on a pan, and pop into an oven heated to 400 degrees for 10 minutes.  Check to see if the fish is done by poking a knife into the thickest part of a fillet and checking that the centre is cooked.  

    I serve this with roasted fingerling potatoes:

    3 cups scrubbed fingerling potatoes (use baby potatoes or diced yukon golds if you can't find fingerlings), cut in half

    1/4 cup olive oil

    1/4 cup lemon juice

    1 scant tbsp fresh-cracked pepper

    1/2 tbsp pureed garlic

    - Whisk the oil, juice, and spices together, and toss the potatoes in it

    - Place the fingerlings cut-side down on a foil-lined pan and bake for 30 minutes at 350

    Bring along some cauliflower or broccoli au gratin - it keeps very well when re-heated.

    1  26-ounce jar pasta sauce

    1  30-ounce bag frozen large cheese ravioli, unthawed

    1  10-ounce box frozen chopped spinach, thawed and squeezed dry

    1  8-ounce bag shredded mozzarella

    1/2  cup grated Parmesan

    Heat oven to 350° F. Coat a 13-by-9-inch baking dish with cooking spray and spoon in a third of the sauce. Arrange 12 ravioli on top and scatter the spinach over them. Top with half of each cheese. Cover with another layer of ravioli and the remaining sauce and cheese. Cover with foil and bake 25 minutes. Uncover and bake 5 to 10 minutes more or until bubbly.

    Yield: Makes 6 servings

    a McCormick's cooking bag and follow the directions on the package.

    INGREDIENTS

    1 pound ground beef

    1 egg

    1 tablespoon cornstarch

    1 teaspoon salt

    4 tablespoons diced onion

    1 pinch ground black pepper

      

    1 tablespoon vegetable oil

    1 cup pineapple juice

    3 tablespoons cornstarch

    1 tablespoon soy sauce

    3 tablespoons distilled white vinegar

    6 tablespoons water

    1/2 cup granulated sugar

    4 slices fresh pineapple, cut into pieces

    1 large green bell pepper, cut into thin strips

    1/4 carrot, thinly sliced

    1/3 onion, cut into wedges and separated

    1/2 cup ketchup

    DIRECTIONS

    In a mixing bowl, combine the ground beef, egg, cornstarch, salt, diced onion and pepper. Form into 1 inch meatballs; about 20.

    In a large skillet over medium heat, brown the meatballs; drain fat and set aside.

    Heat the oil in a large saucepan over low heat. Pour in the pineapple juice and simmer for a few minutes.

    In a small bowl, combine the 3 tablespoons of cornstarch, soy sauce, vinegar and water. Stir until smooth and pour into the pineapple juice. Add the sugar and simmer until thickened, stirring constantly.  Add the ketchup and blend well.

    Place the meatballs, pineapple pieces, green pepper, carrot and onion into the sauce mixture. Heat thoroughly.

    Serve over steamed rice.

    This is great!  It makes six servings, but I recommend doubling it as everyone will go back for seconds.

  11. Greek Chicken

    4 split chicken b*****s

    2 lemons

    salt and pepper

    Place chicken b*****s in baking pan, sqeeze lemons over chicken, salt and pepper, put in fridge for at least 4 hours.

    Preheat oven to 350 degrees, add 1/2 C water, 1/2 C melted butter or margarine and 2-3 cloves minced garlic (on chicken), sprinkle chicken with dried oregano

    Bake for 1 hour or until chicken juices run clear, serve with following rice recipe

    1 1/2 C uncooked white rice

    2 T margarine

    1 clove minced garlic

    3 C chicken broth

    1 tsp dried basil

    melt margarine in skillt, add garlic and rice, toast lightly, approx 5 minutes, add chicken broth, bring to a boil, add basil, reduce heat and simmer 15 minutes or until liquid is gone and rice is tender.

    Add a nice salad and fresh bread and you have an excellent meal!  Always receives rave reviews!
