  1. 1 ½ lb. lean ground chuck

    ½ lb. mild pork sausage

    1 egg, beaten

    1 small can condensed milk

    1 medium onion, chopped

    1 small bell pepper, chopped

    2 tblsp. worcestershire sauce

    1 tsp. seasoned salt

½ tsp. coarse ground black pepper

    oatmeal or bread crumbs

    ketchup

    Pre-heat oven to 350 degrees.

Allow beef and sausage to come to room temperature. Combine first 9 ingredients in large bowl and mix thoroughly. If mixture is loose add 1 - 2 heaping tablespoons oatmeal or bread crumbs and mix again. Do not add too much as it will cause the meatloaf to be dry.

Put into loaf shaped pan and bake uncovered 45 minutes. Pour excess fat off and return to oven for 30 minutes. Pour off fat again and top loaf with ketchup. Bake another 10 - 15 minutes. Pour off final fat and let rest 15 minutes before slicing.

Total baking time should be 60 - 90 minutes.

  11. Make a good old traditional omelet? it doesn't take long, it's simple, and it can be very good. Just have mushrooms, onions, cheese, ham, herbs, and whatever else you like in it, the eggs, and voila!

Or if you want something more fancy, you can add milk, pour the omelet liquid in a pan for making small muffins, and you'll have interesting omelet muffins! (But watch out, it's tricky to get out depending on the pan)

  12. Prep and Cook Time: 40 minutes

       2. Add red chili powder, mix in well and add broth, zucchini, collard greens and tomatoes. Cook for another 5 minutes and add beans, corn, green chili, oregano, and cumin.

       3. Bring to a boil on high heat. Once it begins to boil, reduce heat to medium low and simmer uncovered for 15 minutes longer. (Simmering uncovered enhances the flavor) Add chopped cilantro, pumpkin seeds, salt and pepper.

          Serves 6

          Serving Suggestions Serve with

              * Romaine and Avocado Salad

    Healthy Cooking Tips:

For the best flavor it's important to chop the collard greens very fine. In doing so, their flavors blend better with the other ingredients and are easier to eat. If they are too big, they may taste too bitter.
