I need a recipe for Frozen Spinach!?

My freezer is full of it, I must have lost track. Vegetarian please and no spinach dips with tons of mayo - yuck!

  2. Defrost, squeeze out water and saute with a little olive oil and garlic.  You can also make a spinach quiche if you eat eggs.

    add spinach to any soup, like wedding soup or vegetable minestrone.

    Boil some pasta.... set aside. Crush 4-5 cloves of garlic and saute in some butter or olive oil, your choice. Add the spinach, some feta cheese and the pasta.

    usually I add some chicken but Ive done it without chicken and it is delicious!  

  5. Spinach Muenster Quiche

    INGREDIENTS

    8 ounces Muenster (or use your fave) cheese, sliced

    2 (10 ounce) packages frozen chopped spinach, thawed and drained

    2 eggs

    1/3 cup grated Parmesan cheese

    1 (8 ounce) package cream cheese, softened

    salt and pepper to taste

    garlic powder to taste

    4 ounces Muenster cheese, sliced

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    Line a quiche dish or 9 inch pie pan with the 8 ounces of Muenster cheese slices. Carefully press all of the water out of the spinach and place it in a large mixing bowl. Add eggs, Parmesan cheese, cream cheese, salt, pepper and garlic powder; stir well. Spoon mixture into pan and top with remaining cheese slices.

    Bake in preheated oven for 35 minutes and allow to set up for 10 minutes before serving. Decrease oven temperature by 25 degrees F if using glass pie dish.  

  6. I put frozen spinach in veggie soups.  Use veggie broth, garlic, carrots, onion, frozen spinach (whatever else you want)...add some whole wheat pasta, lentils, or white beans...YUMMY!



  7. Best Ever Spinach Souffle

    This is my great aunt's recipe. She is one of the best cooks I know. It is so good it is one of the best dish she makes. It tastes even better the next day microwaved. I eat it for breakfast. May need to be cooked longer depending on oven.

    SERVES 8     *

    Ingredients

        * 1/2 cup chopped onion

        * 2 garlic cloves, minced

        * 1 tablespoon butter

        * 8 ounces cream cheese, softened

        * 8 ounces farmer cheese, shredded

        * 1/8 teaspoon salt

        * 1/8 teaspoon pepper

        * 3 eggs

        * 2 (10 ounce) packages frozen chopped spinach, thawed and drained

        * 1/4 tablespoon paprika

    Directions

       1.      Preheat oven to 325°F.

       2.      Cook onions and garlic with butter in small skillet.

       3.      Beat onion mixture, cream cheese, farmer's cheese, salt, and pepper with electric mixer.

       4.     Add eggs one at a time. Stir in spinach. Pour into a greased baking dish and sprinkle paprika on top.

       5.     Bake in oven for 40-45 minutes.


  8. I like it with sautted onions, tomatoes, and mushrooms but make sure you drain the spinach before cooking or they will be very watery from being frozen.

    1/3 c. milk

    1/4 c. onion, finely chopped

    2 eggs, beaten

    1/8 c. olive oil

    2 lbs. shredded spinach

    1/2 lb. feta cheese

    2 tsp. dried dill

    1/2 c. fresh parsley, chopped

    1 tsp. pepper

    16 sheets filo dough

    1/4 c. clarified butter

    Heat oil and cook until tender and transparent. Add spinach and cook 3 minutes. Add parsley and spice. Cover and simmer on low heat for 15 minutes or until spinach lightly sticks on bottom of pan. Add milk. Pour spinach in large bowl and cool. Add feta cheese and eggs, mixing well. Layer 8 sheets of filo dough, brushing each layer with butter, in 9x12 inch pan.

    Spread spinach mixture over filo. Top with 8 layers of buttered filo dough. Bake at 300 degrees for 1 hour or until lightly browned. Serve warm or at room temperature.


  10. Hmm..  I don't know if you mean vegan or vegie but..

    I love Spinach and fetta triangles/ pasties.. Delicious!

    I just saute some onion and garlic, add the thawed drained spinach and mix through with the fetta in a bowl.

    Brush half of the side of some filo-pastry with some butter/ olive oil and put a few tablespoons of the mix onto the filo, fold over into triangle or parcel and brush more oil /butter on the edge to seal.

    Bake till light golden brown - Yum and flakey with melted cheese.. you could use another cheese if you don't like fetta.

    And I would also make lasagne. I make a spinach/ pumpkin lasagne that is delicious..


  11. Cook it with a lot of garlic and some olive oil. Simple but quite good.
