  1. This is my daughters favorite recipe.

    Macaroni and Cheese

    Fannie Farmer's Classic Baked

    1 8 ounce) package macaroni

    4 tablespoons butter

    4 tablespoons flour

    1 cup milk

    1 cup cream

    1/2 teaspoon salt

    fresh ground black pepper, to taste

    2 cups good quality shredded cheddar cheese

    1/2 cup buttered breadcrumbs

    1. Preheat oven to 400°F.

    2. Cook and drain macaroni according to package directions; set aside.

    3. In a large saucepan melt butter.

    4. Add flour mixed with salt and pepper, using a whisk to stir until well blended.

    5. Pour milk and cream in gradually; stirring constantly.

    6. Bring to boiling point and boil 2 minutes (stirring constantly).

    7. Reduce heat and cook (stirring constantly) 10 minutes.

    8. Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.

    9. Turn off flame.

    10. Add macaroni to the saucepan and toss to coat with the cheese sauce.

    11. Transfer macaroni to a buttered baking dish.

    12. Sprinkle with breadcrumbs.

    13. Bake 20 minutes until the top is golden brown.

    14. (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

    6 tablespoons butter

    1/2 cup all-purpose flour

    4 cups milk, warm

    1 teaspoon dry mustard

    1/4 teaspoon freshly grated nutmeg

    1/4 teaspoon cayenne pepper

    Dash salt and freshly ground black pepper

    Dash hot sauce

    Dash Worcestershire sauce

    3 cups shredded Cheddar

    1 pound cavatappi pasta, cooked al dente

    1 cup crushed potato chips

    5 slices cooked bacon, crumbled

    1/2 cup freshly grated Parmesan, for topping

    Heat oven to 350 degrees F.

    Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour and cook, stirring, for 1 minute. Whisk in the warmed milk and bring to a boil, continue to whisk constantly. The mixture will thicken as the heat increases. Continue to stir while adding

    the dry mustard, nutmeg, cayenne, salt, pepper, hot sauce and Worcestershire. Stir in the 3 cups of Cheddar until it melts.

    Pour the cheese sauce over the noodles and add to a 3 quart casserole dish.

    Sprinkle the chips, bacon and Parmesan on top and bake for 35 minutes.

  3. go buy the noodles form the store and cook them like you would from a box and i cut up sliced cheese and but in mine, a little butter, and you can season to taste. or you can use velveeta but i didn't like that it was kinda nasty, but that's the only way that i could think to make home made mac an cheese

  4. OLD FASHIONED MAC 'N CHEESE  

    1 1/2 c. elbow macaroni

    4 tbsp. butter, divided

    1/4 c. all purpose flour

    3 c. milk

    1 tsp. dry mustard

    3/4 tsp. salt

    1/4 tsp. freshly ground pepper

    1 1/2 c. shredded sharp cheddar cheese

    1/4 c. freshly grated Parmesan cheese

    1/3 c. plain dry bread crumbs

    Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, about 8 minutes. Drain and rinse under cold water.

    Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, mustard, salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and whip in cheeses until melted and smooth. Stir in drained macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter, stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes.

    Makes 8 servings.




  5. I make this for every holiday - I just made it yesterday for a labor day cookout and it is delicious.  It takes a little bit of work, but it is worth it.

    Ingredients:

    2 c uncooked elbow macaroni

    1/2 c butter

    1/2 c flour

    1/2 c milk

    1 1/2 c sour cream

    salt and pepper to taste

    16 oz. shredded cheese (mild cheddar or colby jack works well)

    Directions:

    Preheat oven to 350 degrees

    Cook macaroni in salted boiling water according to package directions

    then drain and pour into a 3qt casserole.

    In a saucepan, over low heat melt the butter and gradually stir in flour.  It will become pasty.  Slowly add the milk, a little at a time.  Then the sour cream.  It will help if you have a whisk to mix this.

    Add your salt and pepper to taste.  Continue to cook over low heat until the sauce bubbles and thickens (it will look like alfredo sauce).

    Pour this sauce into the macaroni (in your baking dish) and mix.  Add about half of the cheese to this mixture also.  Reserve the other half of the cheese for covering the top of the casserole.  

    Bake for about one hour, or until bubbly and brown.

    Serves six.  (I usuallly double the recipe, it's so good!)

    My kids say this is better than 'the blues' and gobble it up, even when I toss in a handull of cooked veggies like broccoli, peas, carrots, etc.... It is just as easy as the 'blue box' at least I think so and it is much healthier! World Tour: would fit British, Canadian and SW categories.

    SERVES 6 (change servings and units)

    Change to: Servings US Metric Close

    Ingredients

        * 2 tablespoons butter

        * 2 tablespoons flour

        * 1/4 teaspoon salt

        * 1 dash pepper

        * 1/2 teaspoon mustard powder

        * 1 cup milk

        * 1 cup cheddar cheese, shredded

        * 2 cups macaroni, cooked

    Directions

       1. Make a ‘roux’ by melting butter in pan and adding flour. Stir constantly and cook until it is the color of caramel candy. It burns easily so stir stir stir!

       2.Slowly and carefully add milk while stirring.

       3.When milk starts to steam add cheese and seasonings and stir until melted and well combined.

       4.Pour over cooked macaroni noodles and serve.
