I need a recipe suitable for a pregnant woman i.e. no soft cheeses that is tasty and easy! it will be served as a side dish with chicken!!

Any interesting potato dish could be added as well

  1. WARM & TANGY VEGETABLE SALAD  

    1 can (16 oz.) Del Monte Blue Lake cut green beans

    1/2 c. Miracle Whip salad dressing

    1 tbsp. cider vinegar

    1 tbsp. Dijon mustard

    4 slices bacon, cut into 1/2 inch slices

    1 can (16 oz.) Del Monte whole new potatoes, drained & sliced

    Freshly ground pepper to taste

    Drain green beans reserving 2 tablespoons liquid. Combine reserved liquid, salad dressing, vinegar and mustard. In skillet, cook bacon until crisp; remove from pan. Add potatoes and pepper. Cook, stirring occasionally, until potatoes are golden.

    Add green beans and bacon to skillet. Stir in dressing; heat thoroughly. Serves 4 to 6.



    HASSELBACK POTATOES  

    4 potatoes, baking

    5 tbsp. butter, divided

    1 tsp. salt

    1 tbsp. bread crumbs

    1 tbsp Parmesian cheese (optional)

    Slice potatoes widthwise almost through. Drizzle 2 tablespoons butter and the salt on potatoes. Bake 30 minutes. Drizzle remaining butter. Sprinkle bread crumbs over potatoes. Bake 20 minutes. Sprinkle Parmesan cheese  over potatoes. Bake 10 minutes more.

    I left the cheese in the recipe to give you the idea for yourself, skip it for your friend.


  2. My signature dish is a dish that I got out of a Safeway catalogue:  It is very healthy as I use cooking spray to spray on the veges and that is it!

    Roasted pumpkin (cubed), roasted zucchini (cubed), roasted capsicum (sliced), roasted red onion (quartered), a few garlic gloves.  Roast these in the oven (only takes ½ hr as everything is small)  Toast some pine nuts until brown (5mins in the oven while the veges are cooking)  Put all ingredients on a bed of spinach leaves or gourmet salad (or salad of your choice) and drizzle with balsamic salad dressing and grinding of salt onto it.  The perfect dinner, chicken and this salad.  It really is delicious...trust me!


  3. 3 baby eggplants cut into rounds

    3 zucchini cut into rounds

    4 tomatoes quartered and then halved the other way

    10 medium sized mushrooms quartered

    good olive oil

    1 clove garlic, chopped

    balsamic vinegar

    lots and lots of basil, torn

    Place chopped tomato in bowl. Fry eggplant until golden on both sides, add to bowl. Fry zucchini until golden. Add mushrooms and stir fry until warmed through. Add these to bowl.

    Combine oil, garlic, vinegar and basil. Mix through salad.

    This recipe is obviously best when made just before serving.
