  1. I know a recipe for rice....as lebanese way..

1 1/2 cup of rice...saute it in butter till they get a bit toasted. Be careful dont burn it.

When reach that point, add 3 cups of boiling water  which you salted first as you like it. Dont mix the rice at all.

Cover the pot, and cook it till the water dries up. Turn the heat down and let the rice rest for 5 minutes b4 serve it.

I don't know how to correctly spell this one.

Phonetically, it sounds like "Bite an Jenn".

    1 lb. lamb

    1 large egg plant

    1 1/2 c. uncooked rice

salt, pepper, garlic, cinnamon to taste.

Brown lamb cut into cubes in oil.

Bring 3 cups water to a boil in large sauce pan.

In layers add to the boiling water :

    Browned lamb cubes.

Skinned raw eggplant cut into cubes on top.

    Add the spices to water.

    Add uncooked rice.

    DO NOT STIR.

Make sure all comes to a boil again.

    Cover and simmer 20 minutes.

(once mixture is covered. do not stir or open the lid

    and peek..no matter how tempted..until 20 minute

    simmer time is up.)

Then remove from heat & uncover but do not stir.

Place a large plate or platter on top

of sauce pan and turn over...invert...contents to plate.

    It looks so pretty.

Rice on bottom with eggplant & lamb on top.

    Big spoon to dish up.

    SOOO tasty!!

    Hope these help.

  4. the brown long ones are not rice they are vermicelli (kind of short pasta)...you sautee it with butter under their color turns golden-brown, be careful not to burn them, then add 1 cup rice (enough for 3 pple) and mix it all togethere with a wooden sppon, then add a pinch of salt and add 2 cups of water (always 1 cup of rice vs 2 cups of water) let it boils, the cover and turn heat down and let it simmer for 15 min (or until the water is dried up)
