Question:

I need a sharp meat knife

I need a knife that will cut as easy as possible semi-frozen meat like whole turkey or deer.

can anyone recommend a brand or type please?

  1. For frozen meat - best bet is a serrated knife.

    For defrosted meat - boning knife.

    Bones and joints - cleaver

    A serrated knife should get you through the turkey bones just fine - but if you want to separate the deer bones - gotta use the cleaver.

    The most important thing when looking for knives - find one with a full tang! I've lost several partial tang knives on a frozen hunk of meat. The tang is the part of the knife that extends from the blade into the handle.  

    I perfer carbon steel knives. With proper care they will last FOREVER. You can save some cash by buying stainless steel knives - but you will need to replace them once every year or two.

    Some of the top brands are Wusthof, Global, Henckel, & Shun. They will all set you back a pretty penny - but will last you a lifetime! My mum has a set of Wusthofs that are over 30 years old! She's only had them sharpened ONCE (though she does hone regularly). If you decide to buy top of the line - go to a kitchen store and ask to speak with a knife specialist. HOLD the knives - find the one that feels most comfortable. Henckles are too light for me, I grew up using the heavier Wusthofs. I wouldn't buy the knives in a kitchen store though - mark up is crazy. Shop around online.

    If you're not ready to buy top of the line knives, there are some other options. Forschner  (made by Victorinox the very same that brought us Swiss Army Knives) & Chicago Cutlery are a great low budget knife. And Ginsu of infomercial fame works pretty well. Of course these won't last long, with the type of work you're going to put them to - they'll see about a year maybe 3 if you take care of them.

    You might want to try clearance stores such as Tuesday Morning or Big Lots, you could find some decent knives at a good price their.
