I need about 5 recipes for a Unique Dinner! Help

I need them to be as unique as possible! I get bored of cooking the same things over and over and I don't want to keep going out to eat all the time.

  2. Shrimp, Jicama & Mango Salad

    3/4 cup water

    2 teaspoons salt

    1 1/2 pounds large shrimp, shelled

    1 small jicama (about 3/4 pound), peeled cut into 1/4-inch dice

    1 mango, peeled cut into 1/4-inch dice

    1/2 cup chopped cilantro or flat-leaf parsley

    6 tablespoons lemon juice

    1/2 teaspoon Dijon mustard

    1/4 teaspoon fresh-ground black pepper

    1/4 cup olive oil

    In a large frying pan, bring the water and 3/4 teaspoon of the salt to a boil. Add the shrimp, cover, and bring back to a boil. Cook, covered, over moderate heat for 1 minute. Stir. Continue cooking until the shrimp are just done, about 2 minutes longer. Drain. When the shrimp are cool enough to handle, cut each one in half lengthwise and then in half crosswise. Put the shrimp in a large glass or stainless-steel bowl and add the jicama, mango, and cilantro. In a small glass or stainless-steel bowl, whisk together the lemon juice, the mustard, the remaining 1 1/4 teaspoons of salt, and the pepper. Add the oil slowly, whisking. Just before serving, add this vinaigrette to the shrimp mixture and toss.

    Gnocchi Gratin

    2 tablespoons unsalted butter

    Cooked Potato Gnocchi

    1 tablespoon extra-virgin olive oil

    2 ounces thinly sliced pancetta

    2 garlic cloves, minced

    1 medium head of radicchio (1/2 pound), thinly sliced

    1/3 cup heavy cream

    1/3 cup whole milk

    4 1/2 ounces Gorgonzola dolce, crumbled (1 1/2 cups)

    Salt and freshly ground pepper

    1/2 cup freshly grated Parmigiano-Reggiano cheese

    3 tablespoons fresh bread crumbs

    3 tablespoons pine nuts

    Preheat the oven to 350°. In a large, nonstick skillet, melt the butter. Add the gnocchi and cook over high heat until browned on the bottom, about 2 minutes. Transfer to a 9-by-13-inch baking dish.

    In the same skillet, heat the oil. Add the pancetta and cook over low heat until the fat has rendered, 6 minutes. Add the garlic and cook over moderate heat for 1 minute. Stir in the radicchio, cover and cook until tender, 4 minutes. Add the cream, milk and Gorgonzola and simmer to melt the cheese, 2 minutes. Season with salt and pepper.

    Pour the sauce over and around the gnocchi. Top with the Parmigiano-Reggiano, bread crumbs and pine nuts. Bake on the upper rack for 20 minutes, until the gratin is golden. Serve.

    Spinach Salad

    3/4 cup walnuts, chopped

    1/4 pound sliced bacon

    2 tablespoons red-wine vinegar

    1 teaspoon Dijon mustard

    3/4 teaspoon salt

    1/4 teaspoon fresh-ground black pepper

    1/3 cup cooking oil

    2/3 pound smoked and sliced boneless chicken breast

    1 pound spinach, stems removed, leaves washed (about 9 cups)

    1 small red onion, chopped fine

    1 tart apple, such as Granny Smith, peeled, cored, and cut into 1/2-inch pieces

    Toast the walnuts until golden brown. Let cool.

    In a large frying pan, cook the bacon until it is crisp. Drain the bacon on paper towels and then crumble it. In a small glass or stainless-steel bowl, whisk the vinegar with the mustard, salt, and pepper. Whisk in the oil. In a large bowl, combine 2 tablespoons of the dressing with the chicken. Let sit for about 5 minutes so that the chicken absorbs the dressing. Add the walnuts, bacon, spinach, onion, apple, and the remaining dressing and toss.
