Mexico. I am an okay cook but I fix Southern comfort food and they don't like that food. Thank you for your ideas.

  1. i'm not sure how many southern/spanish food crossovers there are...

why don't you try cooking a paella? they're really tasty, and pretty easy to cook, and you can use different ingredients (eg you can have shellfish and prawns, or chicken, or fish...) so you can include ingredients that you like

there's hundreds of recipes, but the basics is you cook your ingredients (eg chicken, chorizo sausage, onions, peppers etc), add paella rice, pour over stock and add seasoning and saffron, and just leave to cook... (similar-ish to a risotto)

  2. Basically, just cook European (e.g., Spaghetti, Pizza) or even American food (eg., barbeque) and add a lot of herbs, such as saffron / turmeric.

Spanish people also like dishes with a lot sauces or stuffed dishes (e.g., embutido is easily made, so is pollo galantina).

  3. You can make a chicken soup and add calabacitas to it and garlic. Calabacitas are Mexican squash. You could also make corn bread and add diced green Chile to it.

You could roast some corn on the cob, put a light coat of mayo, butter or leave plain. Sprinkle with Chile powder and lime juice.

Instead of stuffed bell peppers you could switch up and use poblano peppers stuff and coat with egg mixture to make Chile Rellenos.

    I hope this helps you...

  4. Make Spaghetti, but not the "traditional" way...

    Here is my recipe...

    2lbs of lean ground beef

    1lb thin spaghetti

    2pkg. fresh sliced mushrooms

1/2 cup of chopped (jar) jalapenos

    1 med. chopped onion

    1/4 cup garlic pepper

1 can Delmonte Garlic & Onion spaghetti sauce

1 can Delmonte Green Peppers & Mushroom spaghetti sauce

1 lg. jar of Prego Zesty Mushroom

2 cans Delmonte zesty jalapeno diced tomatoes (don't drain)

Brown your beef with jalapenos, onion, garlic pepper, mushrooms, drain

    Cook spaghetti until tender

Add all ingredients in a large pot and heat for about 15-20 minutes.

This is absolutely the best spaghetti ever, especially if you enjoy spicy food.

  5. Goya Adobo seasoning... add it to just about anything.

  6. Some rice dishes, such as Hopping John, with pintos substituted in for the black eyed peas, would definitely have more of a Mexican feel to it.  Roasted corn on the grill is also a good choice here.  But if you wanted a SPANISH feel to it, roast chicken instead of frying, season rice somewhat plainly (not as much spice as Southern comfort or soul food) and serve sliced cucumbers and tomatoes.

  7. well you can cook some black beans  and when they r done cooking  put them in a frying pan and add some tomatoes onions and green peppers and let it simmer for about 10-15 min my  b/f loves that he is from Honduras , or you can cook black beans and rice ,   like  or you could   make some tortillas  and have some fajita style chiken peppers and so on
