I need an extra low-carb vegetarian main dish - No wheat, rice or pasta of any kind please.?

I have been scouring the internet for a low carb veggie meal that doesn't have ANY pasta, rice, or wheat products. I'm at my wits end.

I have a dinner guest coming on wednesday that is vegetarian (no fish either) - I am just starting on the south beach diet which requires an entire purging of carbs for two weeks. I need a filling main course we can both eat. I already have an appetizer and side dishes.

I'm willing to use some fruit in the dish (though not too much) even though that breaks the no carb rules.

  1. No carb is impossible...most foods have carbs and you need them for proper organ function and energy.  Cutting out a whole food group like grains is ridiculous.  Carbs are not the enemy..just switch to the good ones like brown rice, whole wheat pasta and bread and veggies.


  2. How about this low carb lasagna recipe.  I'll give it to you with meat in it, but you can sub anything that you want and it tastes very good.

    1 medium eggplant

    1 package frozen spinach - thawed

    1 egg

    1/2 cup parmasean cheese

    1 cup salsa

    1 lb ground beef

    Preheat oven to 350.

    Cut the eggplant into thin slices and sautee lightly in olive oil.  You only want to brown each side.  Set aside.

    Mix the spinach with the egg (which is optional) and the parmeasan cheese.

    Brown your beef - in your case, you can use broccoli or cauliflower and any other veggies.  If you use veggies, sautee them lightly.

    Assembly:

    Use the eggplant as your noodles.  Layer a 9x9 pan with some eggplant.  Make a layer of the spinach mixture.  Add another layer of eggplant.  Add your veggie or beef mix.  Add another layer of eggplant.  Add some mozzarella cheese.  Bake for 30-45 minutes.

    Tips:

    I use extra salsa to make it a little wetter.

    If you use a lot of olive oil when you sautee the eggplant, the dish will taste oily.

    Carbs equal ZERO!!!

  3. Beans and veggies maybe? It is really impossible to be a vegetarian or vegan and not eat carbs. Maybe salad with Italian dressing.

  4. Make a salad, (even though all vegetables are carbs - some carbs are better than others).  Leafy greens, grated carrots, diced tomatoes, broccoli (raw is fine), chopped nuts, sesamie seeds, lentils (from can you don't need to cook them), avocado, squeeze a lemon on top of salad instead of mayo.  YUM.  If you have any other veges you like then add them in.

  5. ever try spaghetti squash? you can use it to substitute anything spaghetti. you just buy it and boil it whole, then cut it open and the squash will come out as spaghetti-shaped, naturally! Really! use pesto or your favorite pasta sauce.

    you can also try to make avocado sushi without the rice, that actually works, i tried.

  6. Artichoke and Spinach Frittata

    6 ounces marinated artichoke heart

    1 cup chopped onion

    1 cup grated parmesan cheese

    1 teaspoon minced garlic

    1/2 teaspoon oregano

    4 eggs

    1 teaspoon salt

    1/2 teaspoon pepper

    10 ounces frozen chopped spinach -- thawed

    Preheat oven to 350. Spray a 9" pie pan with vegetable oil. Drain oil from artichokes into a small skillet. Add onion and garlic. Cook until onion is tender. In a mixing bowl, beat eggs until foamy. Dice artichokes and add to eggs, along with cooked onion and remaining ingredients. Stir well. Pour into prepared pie pan and bake 25 minutes. May be made the night before and refrigerated. Serves 6.

    Baked Cheese-Zucchini

    2 medium Zucchini -- sliced very thin

    1 Egg

    1 tablespoon prepared mustard

    1/8 teaspoon Ground white pepper

    1/8 teaspoon Ground nutmeg

    1 Green onion -- sliced thin

    1/2 cup Swiss cheese -- grated

    Put the zucchini in a colander or on towels to drain off the

    moisture. Combine the remaining ingredients.

    Add the zucchini and mix well. Pour into a lightly oiled 2-quart

    casserole. Bake at 350 F for 40 to 45 minutes.

  7. What is wrong with carbs? The real question is good carbs versus bad carbs. Whole grains are GOOD; refined are not. And even more detailed--gluten-free is the best! That would include quinoa, brown rice, millet, buckwheat, and whole corn...

  8. Alright I have a great recipe you can use.

    Its called WATER.

    It has no fat, no carbs, and nothing at all really!
