  1. an impressive dish is a fish

  2. black bean avocado dip

5 avacados, diced and pour 1 cup lime juice on top and stir to thoroughly coat avocados

2 cans black beans drained and rinsed well

2 cans of white corn drained well

1 large red onion diced very small

    1 bunch cilantro chopped

    1 tbsp chopped pickled jalepenos

    mix all ingredients well,

stir in more lime juice before serving, you can use bottled lime juice

iit holds up in the heat outdoors  its very refreshing, healthy and appealing to the eye.... all the wives will go nuts....trust me!!!!,

  3. Make a taco dip and serve with tortilla chips...layer these ingredients (anyway you like).

    Browned seasoned hamburger meat

    Sour cream

    Salsa

    Shredded cheese

    Guacamole

    Olives

    Chopped Tomatoes

    Chopped Onions

Refried Beans (I usually use this as the bottom layer)

What guys don't love Mexican food!

  4. I have something so fabulous and so easy.  Get one pound uncooked penne pasta and a jar of Ragu brand roasted garlic sauce (very specific that sauce is the best jarred sauce) Get mozzarella cheese and fresh grated parmesan.  Use a large mixing bowl throw in the uncooked pasta and the entire jar of sauce then fill the sauce jar with water and shake it to get all the sauce out and pour in the jar of water as well.  Mix the pasta water and sauce to make sure it’s well combined it will be watery. Pour the mix in a 9x13 pan and pre heat the oven to 350. Cover the pan with foil and bake for 45 min then take the foil off and top with the cheese plenty of it re cover and bake for 20 min more. Last remove foil and let the pasta bake for 5 to 10 min just till the cheese is well melted and a little brown.  It's like lasagna but super simple and no boiling water. Just bake and walk away.

  5. Construction guys have big appetites as they are hard workers all day long, so a Cassarole dish would be nice. Or Enchiladas and Rice...you can never go wrong there...Or Tacos!

Ah...I think I misread your question...I was thinking you were going to bring them lunch and they were going to have a picnic one day at work...OK, this is a "Company Picnic" right? Well I have an impressive dish that is real simple to make and it is very tasteful!

Recipe..this is my own concauction (sp?)

    PREHEAT OVEN TO: 350 degrees

7 Yellow Squash Peeled and Sliced

1 Pkg of Chicken b*****s Boneless and Skinless

    2 cans of Rotel (drained)

2 pounds of Shredded Cheese Mexi Style

Boil the Sliced Squash until soft

    Boil Chicken until done

Drain Squash in colandar (strainer) and spread squash into 13x9 baking dish.

Shred chicken with food processor, or by hand. I use my food processor. Spread Chicken on top of Squash.

Pour the 2 cans of Rotel (drained)  over Chicken and spread evenly.

Spread the 2 pounds of Shredded Cheese on top of Rotel to cover the top of the dish.

Place dish in oven and bake for 30 min.

YUM-O!!!!  I have had great compliments on this dish!  Have a great time at your picnic! This will serve about 6-8 people.

It will be great if you had one of those warmer bags to place your dish in. You could always get one of those disposable 13x9 foil pans to bake this in and it will still come out great. That way you don't have to worry about carrying your own dish. Get one with a lid so that the dish will stay hot until you get to the picnic.  :-)

Hope this helps. If you don't use my idea for the picnic, try it one night at home. :-)

  6. Bring a peanut butter sandwich but wear a bikini. Believe me he will be impressed.

  7. I would make a risotto with Italian parsley garnish.

  8. Ahh, yes.  How about a key lime pie.  Everyone thinks it's so hard but it's not.  Buy a bottle of Nellie and Joe's Key Lime juice at the grocery store, the recipe is on the bottle.  You will love this pie and so will the guys.

  9. You didn't say easy or cheap, right? You're looking for impressive - give this a shot. I've been waiting and waiting for a question I could answer with this recipe ;-)

    VEGETABLE PATE

    butter

1/2 c sliced green onions, white only

1 10 oz pkg frozen chopped spinach thawed and squeezed

    1/2 c half and half

    1/4 c tahini

    salt

    6 eggs

2/3 c whole wheat bread crumbs

    1/2 c grated parmesan cheese

    1 tsp dried oregano

    1 small white onion minced

    1 lb mushrooms coarsely chopped

    1/4 c dry sherry

    ground pepper

    4 large carrots sliced

    1/2 c dried apricot halves

    1 clove garlic grated

    1/4 tsp ground ginger

    1/4 tsp ground nutmeg

Butter 8 X 4-inch loaf pan. Set aside.

Melt 2 tbsp butter in medium skillet and saute green onions until tender and translucent. Add spinach, stirring to coat with onions and butter. Remove from heat.

Whisk together 1/4 c half and half and tahini in mixing bowl until smooth. Stir in spinach and season to taste with salt.

Beat together 2 eggs in separate bowl. Stir in 1/3 c bread crumbs, 1/4 c parmesan and oregano. Add to spinach mixture. Stir until well combined. Spread in bottom of pan.

Melt 2 tbsp butter in medium skillet and saute white onion until tender and translucent. Add mushrooms and saute until cooked through. Add sherry and remaining 1/3 c bread crumbs. Cook, stirring constantly, 1 minute more, until crumbs have absorbed all liquid.

Beat together 2 eggs in mixing bowl. Add mushrooms to eggs and stir to blend. Season to taste with salt and pepper. Spread on top of spinach layer.

Simmer carrots and apricots in medium saucepan in water to cover until carrots are just cooked through. Drain and puree together in food processor or blender.

Melt remaining 2 tbsp butter in large skillet and saute garlic until beginning to brown. Combine carrot-apricot mixture and remaining 1/4 c half and half and add to garlic butter. Cook over low heat, stirring constantly, until mixture comes to boil. Remove from heat.

Beat together remaining 2 eggs in mixing bowl. Stir in carrot-apricot mixture, ginger, nutmeg and season to taste with salt. Spoon over mushroom layer.

Butter piece of waxed paper to fit over top of pate. Place butter-side down, then cover with foil. Place loaf pan in deep baking dish and pour boiling water into outer dish to depth of 2/3 up side of loaf pan.

Bake at 350¡ until pate is firm to touch, about 3 hours. Check often to keep water level 2/3 up side of loaf pan.

Transfer loaf pan to wire rack and let cool at least 1 hour. Refrigerate overnight.

To serve, run knife around outer edge of pate and carefully turn upside down on cutting board. Place serving plate on top and invert; carrot layer up. Remove wax paper.
