I need basic rice recipes- ways to dress up white and brown rice?

my aunt bought a huge bag of rice for some reason. i am not a fan of rice and am trying to eat as healthy as possible. i need ideas on how to dress up this whole grain brown rice- without using tons of butter and salt- so that we can eat it. some salt is okay, i just hate tons of sodium in foods. i love veggies and pretty much am open to any suggestions. the most simple and basic the better. i don't have many spices and no easy, cheap access to fresh herbs/spices. i eat mostly chicken, but sometimes beef as well. would love a home recipe for dirty rice- the boxed is too salty

  1. you could pre-cook some shrimp in garlic butter (heat butter and then add a couple of garlic gloves) and toss it in the rice.

    you could also add some peas if you'd like.

  2. 4 cups low-sodium chicken stock

    1 1/2 ounces dried porcini mushrooms

    3 tablespoons butter

    1 medium onion, diced

    1 1/2 cups Arborio rice

    1/2 cup dry white wine

    1/2 cup grated Parmesan

    3/4 cup (3 ounces) Gorgonzola, crumbled

    1/4 cup chopped fresh chives

    1/2 teaspoon kosher salt

    1/4 teaspoon freshly ground black pepper

    In a medium saucepan, bring the stock to a boil over medium-high heat. Add the porcini mushrooms. Remove the pan from the heat and set aside for 30 minutes until the mushrooms are tender. Using a slotted spoon, remove the mushrooms and set aside.

    Reheat the stock to a simmer and keep warm over low heat.

    In a large, heavy saucepan, melt 2 tablespoons of the butter over medium-high heat. Add the onion and mushrooms and cook until the onions are tender but not brown, about 3 minutes. Add the rice and stir to coat with the butter. Add the wine and simmer until the wine has almost evaporated, about 3 minutes. Add 1/2 cup of warm stock and stir until almost completely absorbed, about 2 minutes. Continue with remaining stock, adding 1/2 cup at a time, and allowing each addition to be absorbed, until the rice is tender to the bite and the mixture is creamy, about 20 to 25 minutes. Remove the pan from the heat. Stir in the Parmesan, Gorgonzola, chives, salt and pepper. Transfer the risotto to a serving bowl. Serve immediately.

  3. When you make stir fry you can put it over rice and you dont even need butter and salt.  Or you can substitute the water with chicken broth and it will be tastier.  Or maybe some sort of casserole with chicken, rice, celery, carrots and maybe a low sodium soup.

  4. Healthy Fried Rice (no, really!!!!)

    Make brown rice, put it on a baking sheet and put in it the freezer, uncovered. (sounds funny, but it works)

    Sautee carrots, peas, red pepper flakes & garlic in olive oil in a large pan. Add chicken, beef or shrimp to cook, then add green onions and bean sprouts. Then add rice (gets a little cold and sticky in the freezer, which you want, otherwise it gets mushy) and a low sodium soy, mix around, then add 1/2 a small container of egg beaters. Mix together and serve. It works everytime, you can get creative with your ingredients, this is just how I make it.  

  5. You can use brown rice and anything you want in this...if you don't have it..leave it out.

    Baked Dirty Rice

        * 1 cup raw rice

        * 1 pound lean ground meat, chicken OR crabmeat or shrimp

        * 1 can cream of mushroom or cream of celery soup

        * 1 can condensed onion soup

        * 1 teaspoon Kitchen Bouquet or Gravy Master

        * 1/2 cup chopped green bell pepper

        * 1/2 cup chopped celery

        * 1/2 cup chopped green onion

        * 1 teaspoon salt

        * 1/2 to 1 teaspoon ground red pepper

    Preparation:

    Combine all ingredients; put into an 8x8-inch square baking dish (all raw) or 2-quart casserole. Mix well. Cover tightly with foil, then place a cover over the top (or another layer of foil) to keep steam in. Bake at 425°

  6. I like to stew tomatoes and onions and add them to the rice. It's different. If you add a Tablespoon of sugar for something different.

  7. Jambalaya its easy and really really good

    ingredients:

    1 smoked sausage

    1/2 pound chicken breast cut in chunks

    2 cups brown rice

    1 onion

    2 tbsp garlic

    4 cups chicken/beef broth (or water)

    1-2 cups other veggies you like

    1 tsp cooking oil

    in a decent sized pot brown the meats in the cooking oil with the onion, when they are brown remove from the pan and add the onion and garlic stir around so that the little brown bits on the bottom of the pan come loose, add the rice and stir in again to coat it with the fat left in the pan, add the meat back to the pan and the water, cover and simmer on low heat (just barely boiling)around 30 mins, at this point add your veggies stir and recover cooking another 15 -20 mins depending on how you like your rice

    with the guy above me recipie, the condensed soups and mxies are PACKED with sodium try to get the low sodium versions if you use them other then the salt that recipie is great
