I need cookie help!?

Whenever I make cookies they always turn out flat. How do I fix this?

  1. Your baking soda might be bad. I found this out the hard way...by going to culinary school! You'd think it would be obvious, right? If you want to check, put a spoonful of baking soda into a cup of water. If it bubbles, you're good to go. If it sinks to the bottom, that could be your problem. Also, regular AP flour goes bad as well. Check your ingredients first and then your methods.

  3. chill the dough thoroughly and scoop them out ,  do not flatten them , try cooking a little higher temp so that they start to brown earlier and are still soft and thick and chewy in the middle.  

  4. Add a bit more flour than the recipe calls for.  Sometimes recipes need a little tweak now and then.  Also make sure your leavening is fresh.  

    After mixing a batch of cookie dough....bake one cookie and see whart that looks like.  If it is flat and not supposed to be then add a little flour.

    also...a nice trick that I do is roll my dough into a little ball instead of droping the dough from a spoon.  It makes the cookies almost perfectly round and a ittle high in the center.

  5. do you use baking powder? and if so, then maybe it expired?

  6. make sure your baking soda and baking powder are not expired or old.  If you can't remember buying them, get more!  (sent your old soda to the fridge to absorb odors)

    Chill dough; let metal pans cool between batches.

    Use shortening instead of butter
