What are some tasty and HEALTHY meals for breakfast/lunch/dinner that contains no meat.

As long as you are cooking your own meals, you should be aware of everything you are putting into your body.  Use fake bacon, breakfast sausage, or tofu.  They all make a great substitute for meat.  Use free range eggs (if you eat them).  Be aware of high fructose corn syrup and partially hydrogentated oils!  It really is easier to eat healthier if you are cooking for yourself.  I will get back with some recipes (this was more of a starting suggestion). Look at all ingredients in what you are buying.

  3. Breakfast:oatmeal with cinnamon,soy milk and,honey with an apple or n e other fruit of choice.

    Lunch:saute sliced mushrooms with onions and sweet peppers and put on a grilled garlic buttered bun.

    Dinner:Carrot Ginger Soup

    2 tbsp olive oil

    1/2 cup minced onion

    1/4 cup minced peeled fresh ginger

    4 cups peeled sliced carrots (about 1 1/2 lbs, or 1 1/4 bags of baby carrots)

    3 cups vegetable stock

    1/2 cup orange juice

    1/2 cup half-and-half

    pinch cinnamon

    salt and pepper to taste

    Heat oil in heavy large saucepan over medium-high heat. Add onion and 1/4 cup minced ginger and sauté until onion is translucent, about 5 minutes.

    Add 3 cups vegetable stock and sliced carrots. Cover and simmer until carrots are tender, about 30 minutes.

    Working in batches, puree mixture in blender or processor. Return soup to saucepan. Mix in orange juice, then half and half. Cook over low heat 5 minutes. Season soup to taste with cinnamon, salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before continuing, thinning with more stock if necessary.)
