I'm not sure how early you want, but since you mentioned the Mongols I would stop at the late middle age.

1- The Japanese: with their Shoguns & Samurais

2- The Seljuk Turks: they were famous horse archers & one of their famous leaders is Alp Arslan

3- The Muslim Arabs: their famous general Khalid ibn Al-Walid had defeated the empirial armies of Persia & Eastern Rome despite the fact that his troops were outnumbered for the most part

4- The Mamluks of Egypt: they were the slave solders of the Egyptian Sultan. Eventually they seized power, defeated the Crusaders & Mongols

5- The Knight Templar: a military order, which was established after the 1st crusade. There was also the knight hospitallers & the Teutonic order

6- The Normans: they were pretty much descendents of the Vikings

7- The Franks: they developed the heavy infantry & heavy cavalry in Western Europe. Among their famous leaders are Charles Martel, & Charlemagne
