Question:

I need help with lunch please!

what do you guys think i should eat for lunch? im a muslim, so its going to have to be something vegetarian, also, im looking forward to something uniqe!

  1. Sandwiches like PB and J/etc or tofurkey or lightlife deli slices with tomato and hummus, pita sandwhiches with hummus and tabouli, chicapeas and tomato, pasta salad, quinoa or couscous and beans or lentils with chickapeas, cold soup/gazpacho, roll-ups/wraps in tortilla with fixins, vegan tuna or potato salad, vegetables with rice, gobi aloo, vegan somen salad or other pasta salad, dumplings, samosas.


  2. I have invented a series of Americanized burritos, some perfectly sound for even a vegan.  You could try  my letuce and tomato burrito, the chopped sweet onion/mustard burrito, the peanut butter/chopped celery burrito, the list is endless.

    I roll the stuff up in a wholegrain/soft/lo salt tortilla.  It is great, and fast, and no dishes

  3. I practically live on pasta, couscous, beans, rice, and shrimp. You can find all kinds of recipes for these foods, but I'll give you a few.

    For pasta, toss spaghetti with lemon juice, olive oil, garlic, and capers.

    For couscous, add olive oil, halved cherry tomatoes, sliced scallions, lemon juice, and chopped parsley.

    For beans, marinate black beans in finely chopped fresh garlic, lemon juice, olive oil, chopped parsley, chopped cilantro, ground pepper, and finely chopped carrots for thirty minutes.

    These are perfect summer picnic dishes.

My best friend is muslim and I used to make this for him when we lived in the same dorm.  Take a tortilla and put cooked black beans on it, spread them out they do not need to be heated.  Then put chopped tomatoes, chopped onions, and steamed spinich on top.  Place another tortilla on that and top with pepper jack cheese.  assemble tis on a cookie sheet lined with foil.  put in the oven on 25 , bake for 15 the switch ovent o briol.  broil until cheese is golden brown.  Dress it with sour cream and salsa, lettuce and tomatoe.  It is so good.

  5. Pita bread pizza!

    Easy and fast.

    Place pita bread flat on a cookie sheet and add your favourite pizza toppings (cheese goes last) then bake or broil until the cheese starts to turn brown.

    One of my faves. Try it.

  6. do you have fresh spinach?  take a soft taco shell and lay it on a plate.

    then cut 3 peices of sharp cheddar on it.

    put it in the microwave, or oven until the cheese gets soft and starts to spread out.(like 10 sec. microwave.)

    toss a handfull of spinach onto it, roll up, and um!

  7. For my school lunches I sometimes throw different things into a yummy salad. ( But, make sure the container's sealed... my bad.) Or, I always use  deli meat made from soy. I see this in the fridge section with vegetables. They taste much better than the real thing. ( Their more healthy, too. ) So, on your next shopping trip, look for it. But if you don't see it, think of some great things to put in a salad. Mabye even a new dressing! :)
