Anyway, cooking tofu does take practice, but it's not hard at all.  There are two types of tofu: Chinese (water packed) and Japanese (silken).

Chinese tofu is used for stir-fry, sauteeing, main course-type dishes, etc.  It comes in water-packed tubs and is found in the produce section in conventional groceries or the refrigerator case in Whole Foods or Trader Joe's.

Silken tofu is for puddings, sauces, creamy foods, and can be used to replace eggs in recipes (1/4 cup silken tofu per egg).  It comes in aseptic boxes and is on the shelf in the Asian foods section.

Freezing your water-packed tofu gives it a different texture, but it will turn a yellowy color, so don't worry about it.  You also want to press it before cooking to get as much moisture out as possible.

  4. actually tofu have very mild taste the only different is the texture and water content.

firm and very firm normally wash, cut up into small pieces, pat dry then deep fry till golden brown. it has a very crispy skin and soft inside eat with some dipping sauce or on its own, some time we will also stir fry with some vegetable after deep fry. can also stem and serve with some sauce.

sliken/soft tofu is very soft and smooth, it breaks easily normally therefore steam(dizzle on some soya sauce/ teriyaki sauce and sprinkle some chopped onion or chives yum) or cook in soup. if stir fry need to put in the silken tofu last and stir carefully, cover and simmer for a while

chill Silken add some sugar syrup Nice summer desert

All Tofu has a lot of water if deep fry pat dry or put some heavy object on top for an hour or so to remove extra liquid(firm tofu), if stir fry don't add too much water . there is endless way to cook tofu,

    see recipe.

Eggtofu same with silken tofu but with egg taste, we cut them in big pieces, pat dry then deep fry/cook like silken tofu.

five spice tofu with spices in it so just cut in cubes stir fry with vegetable.

Stinky tofu deep fry serve with chillies sauce.

"preserved tofu" or "fermented tofu" chinese cheese, very salty serve with plain rice porridge or use to marinate meat.
