"Bon voyage, cruise ship style". It's a great excuse to have everyone dress really elegantly! Have fancy finger foods to eat (they don't have to be expensive, just well presented) and someone to play bartender (alcohol or not) and pass out drinks to everyone while chatting it up over some good jazz. Classy, but not stuffy.

make the party themed for the place the person is going to. it would be fun for everyone to get a taste of where your guest of honor is heading. it might make people feel a little more connected to their leaving instead of sad.

make sure you take lots of photos and then turn them into a gift for the guest of honor after they are gone. it will be fun to get something in the mail that reminds them of home.

i think lots of finger foods would be the best. people can get a small plate and travel around the room talking to people and what not.

always make sure there is enough toilet paper and lots of good music. in my experiences not having those two things can be a disaster for a party.
