I need menu ideas for a family reunion picnic that will take us 7 hours to travel to. Any suggestions?

I am needing food ideas that I can prepare early, pack, and transport 7 hours to serve. I would like to prepare as much of the meal as possible rather than purchase quick deli foods to save money.

Things like patato and pasta salads are good. mini quiches are great because you can serve them cold and they always are a hit. A cheese or fruit platter could work too.

Paula Deen's bacon wrapped breadsticks can be made the night before and transported without cooling.

You could take several loaves of Italian or French bread-tomatoes, onion and a bottle of Italian salad dressing. Take lettuce, sliced ham and cheese in an ice cooler. When you get to the picnic assemble giant sub sandwiches. Take a long serrated knife to slice the bread lengthwise and slice the tomatoes and onion. Take potato chips and throw a container of dip in the cooler along with the meat and cheese. Make cookies and brownies the night before leaving- they travel well packed in plastic containers. Take some fruit that doesn't require refrigeration-apples, oranges or a whole watermelon that you can slice at the picnic.

You'll need a few coolers packed with ice. You can get a grill from wal-mart for 20 bucks. All you have to do is pre-cook your food, put it on ice and just heat it up on the grill when you get there. Hamburgers, chicken, steaks, fruit salad, macaroni salad, three bean salad, cup cakes, etc.

No matter what you do, you will have to keep the food out of the danger zone, which is between 40 and 140 degrees fahrenheit.

I would suggest a cold chicken or beef Caesar salad, with extra veggies. It is easy to transport and easy to chill in a cooler. Cookies, brownies and blondies for dessert. Other items are just too cumbersome. Hope this helps, Good Luck!
