Question:

I need menu ideas for box lunch type dinner for 300 to 400 people.?

Looking for something that will be great served at room temperature so the dinners can be assembled ahead of time. I'd love to be able to serve something fun & unique.

  1. You can roast lots of veges (just small bits so it doesn't take too long).  Get some pumpkin, sweet potato, small carrots, red onion, zucchini (maybe capsicum, eggplant and mushrooms if you like - I'm not a huge fan), then toss through with some baby spinach or rocket leaves with olive oil to dress lightly and top with crumbled feta cheese...  That is always a nice salad...  Then you could add some chicken if you felt like it (maybe chicken tenderloin snitzels).

    For something Mexican, another option could be to make chilli con carne or a bean mix (use kidney beans with tinned tomatos and some taco seasoning and a little cheese) and serve in segmented containers with some salad, grated cheese and bouritto wrappers or large toasted corn chips.

    You could try an asian noodle salad with some thin rice noodles, stir fried chicken (make sure it is cooked so it is still moist), snow peas, capsicum with some coriander/cilantro and sweet chilli sauce.

    You could try this salad which is really nice - spiral pasta with baby spinach, sundried tomato and smoked trout pieces (off the bone) tossed through...

    Maybe mini quiches or frittatas with side salad?


  2. Fry chicken ahead and serve at room temperature. Spinach salad with  tomato, and red onion, low fat dressing and cheese. Add some green beans already cooked. Have some whole grain rolls. Add a banana pudding for dessert.

  3. Chicken Salad Sandwiches

    10 ounces canned chunk chicken, drained

    1/2 cup celery, chopped

    1/4 cup plus 2 Tbs. mayonnaise

    2 Tbs. onions, finely chopped

    2 tsp. lemon juice

    8 slices bread

    4 lettuce leaves

    8 slices tomato

    Combine first 4 ingredients and salt and pepper to taste in a bowl. Divide chicken mixture between 4 bread slices. Top with lettuce, tomato and remaining bread slices.

    Easy Chicken Wraps

    1/4 lb. cooked rice

    1-1/3 cups cooked chicken

    3/4 tomato, chopped

    1/3 cup Ranch dressing

    2/3 cup shredded lettuce

    8 large flour tortillas

    Combine rice, chopped chicken, tomato, and ranch dressing. Spoon 1/3 cup mix onto flat tortilla and top with lettuce. Tuck one edge over rice mix and roll up for serving.

    Banana Wrap

    4 8 inch flour tortillas

    3/4 cup peanut butter

    1/2 cup grape jelly

    4 small bananas, peeled

    Place tortilla on a paper towel. Microwave 10-20 seconds on high until soft and warm. Spread with peanut butter. Top with grape jelly. Place banana near the right edge of tortilla. Fold up the bottom fourth of tortilla. Bring right edge over the banana and roll up.

  6. it might b hard to have a room temp meal thats still exciting. ummmm what about vietnamese rice paper rolls?? with sweet chilli dipping sauce.a big scoop of tomato rice. both can be served at room temp or cold sprinkled with coriander. and u could serve it with tea. i dunno thats the only idea i could come up with. good luck!

  7. Well, I would not serve tuna, chicken, or egg salad sandwiches. I suggest this: the ultimate turkey sandwich.

    600 slices apple wood bacon (3 slices each)

    100 cups mayonnaise

    100 cup crumbled Maytag blue cheese or other mild blue cheese

    1,800 1/2-inch-thick slices country-style white bread (about 5x3 inches)

    1600 leaves radicchio (2 leaves each)

    2400 ounces thinly sliced cooked turkey (3 oz each)

    Butter for cooking the sandwhich

                 Preparation

    Cook bacon in large skillet over medium heat until crisp.

    Mash mayonnaise and blue cheese into coarse puree; season with pepper. Place bread on work surface. Divide cheese mixture among bread slices, spreading evenly. Divide bacon, radicchio, and turkey between 2 bread slices. Top with remaining bread, cheese side down. Melt 2 teaspoons butter in reserved skillet over medium heat. Place sandwiches in skillet. Spread 2 teaspoons butter on top pieces of bread. Cover with lid that is slightly smaller than skillet. Cook sandwiches until lightly browned, about 4 minutes per side.

    For the side, chips, cole slaw, potato salad?????.
