Do you have any good ideas for a cheap, yummy, healthy dinner that I can make tonight? I would also like to know how to make chicken spaghetti!

  1. Creamy Fettuccini Alfredo

    1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed

    ¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)

    ½ cup margarine (I use I Can’t Believe It’s Not Butter Light)

    ½ cup milk or half and half (I use 1% or 2% low fat)

    8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)



    In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.

    Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

    Serving Suggestions:

      I serve this with chicken Parmesan, salad, and garlic bread.

    Quick Chicken Parmesan

    4 Boneless Chicken b*****s, pounded flat

    1 jar Spaghetti Sauce (I use Prego mushroom and garlic)

    3 oz. Mozzarella Cheese, grated

    2 cups Italian Bread Crumbs

    2 oz. Parmesan Cheese

    1/2 tsp garlic salt

    1 egg, plus 1 tbs water, slightly beaten

    Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

    INGREDIENTS (Nutrition)

        * 2 tablespoons olive oil

        * 1/4 cup sliced fresh mushrooms

        * 1/4 cup chopped green bell pepper

        * 1 small onion, chopped

        * 1 pound skinless, boneless chicken breast meat - cut into strips

        * 1 (8 ounce) package angel hair pasta

        * 1 cup spaghetti sauce

    DIRECTIONS

       1. Heat oil in a large skillet over medium high heat. Saute mushrooms, bell pepper and onion until soft; remove from skillet and set aside. Saute chicken for about 15 minutes, or until cooked through and juices run clear. Return mushroom mixture to skillet and stir all together.

       2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

       3. Return pasta to pot over medium heat and stir in spaghetti sauce; heat through, then stir in chicken mixture and heat through, stirring. Serve hot.

    Baked Halibut Steaks

    An Italian-style vegetable and feta cheese topping is the perfect enhancement to delicious baked halibut.

    INGREDIENTS (Nutrition)

        * 1 teaspoon olive oil

        * 1 cup diced zucchini

        * 1/2 cup minced onion

        * 1 clove garlic, peeled and minced

        * 2 cups diced fresh tomatoes

        * 2 tablespoons chopped fresh basil

        * 1/4 teaspoon salt

        * 1/4 teaspoon ground black pepper

        * 4 (6 ounce) halibut steaks

        * 1/3 cup crumbled feta cheese

    DIRECTIONS

       1. Preheat oven to 450 degrees F (230 degrees C). Lightly grease a shallow baking dish.

       2. Heat olive oil in a medium saucepan over medium heat and stir in zucchini, onion, and garlic. Cook and stir 5 minutes or until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.

       3. Arrange halibut steaks in a single layer in the prepared baking dish. Spoon equal amounts of the zucchini mixture over each steak. Top with feta cheese.

       4. Bake 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

  7. I make turkey spaghetti for my family at least twice a month.  Make sure you get 99% lean ground turkey and opt for a whole grain pasta.  The best pasta sauce, in my opinion, is Ragu Traditional w/meat.  You're looking at under $10.  Oh....and don't forget the garlic bread!

  8. This isn't that healthy, but it tastes great and it's easy.

    Pasta

    wedge of brie

    3 tomatoes

    olive oil

    minced garlic clove

    4 fresh basil leaves

    Dice tomatoes, shred and chop basil, crush/mince garlic clove (optional), add 2 tablespoons of olive oil, chop and add brie cubes in a serving bowl.  Mix together.

    Cook entire package of pasta, drain and pour on top of ingredients in serving bowl.  Toss and serve.  The hot pasta melts the brie.  The tomatoes taste very fresh and the basil adds nice flavor.

  9. well I am making shish ka bob tonight for me and my boyfriend. They are really good here the recipe for them . Also try like steak green beans, corn or mashes potatoes, um rice o roni any flavor you like. Mac n cheese  

    I sometimes make this recipe i kind of made up myself just use hamburger mac n cheese and pototoes it turned out great I don't really have a recipe for that though cause i made it up.but i hope this helps

    GRILLED SHISH-KA-BOB IN FOIL

    No need for skewers. In a large bowl, mix the following ingredients (cut up into chunks). Peppers Tomatoes Mushrooms Onions Pineapple Or any other vegetable you family enjoys Chicken or sirloin steak

    Arrange vegetables, fruit and meat on large sheet of aluminum foil, dot with 3 pats of butter. Sprinkle with onion salt, garlic salt and pepper. Roll foil around vegetable mixture to make oblong package. Cook over hot coals on grill 30 to 45 minutes. Turn over twice during cooking. NOTE: Amounts of ingredients used will determine serving size.

    Beef Shish Kabob or Kebabs

    Ingredients:

        * 1 envelope Good Seasons Italian salad dressing mix

        * 2 pounds sirloin steaks or other

        * tender cut of beef, cut in 1 to 1 1/2-inch cubes

        * 18 large whole mushroom caps

        * 18 green pepper chunks

        * 15 cherry tomatoes

        * 12 small whole onions or onion wedges

    Preparation:

    Prepare dressing mix according to package directions. Add beef and coat well with mixture. Cover and refrigerate for 4 to 8 hours. Add vegetables to the beef and toss to coat. Arrange beef and vegetables on skewers. Broil or grill over hot coals to desired doneness. Serve with rice and a tossed salad.

    Makes about 6 servings.


  10. Curried Chicken And Bow Tie Pasta Salad

    3 lb Chicken



    MMMMM--------------------POACHING INGREDIENTS---------------

      

          6 ea *Peppercorns

          1 ea *Bay leaf

          1 ea *Parsley Stalk

          1 ea *Sprig of fresh thyme

          1 ea *onion

          1 ea *carrot

          1 ea *celery stalk

        1/2 x  Green Pepper, finely shred

        1/2 x  Red Pepper, finely shred

        1/2 x  Yellow Pepper, finely shred

          8 oz Bow Tie pasta, cooked

          1 ea Salt

          1 ea Pepper



    MMMMM----------------------CURRY FLAVOURING----------------

      

        1/2 x  *Small onion finely diced

          2 t  *Vegetable Oil

          1 T  *Curry powder

        1/2 c  *White wine

          2 T  *Water



    MMMMM----------------------CURRY MAYONNAISE-----------------

      

      1 1/2 c  Mayonnaise

          2 T  Warm Water

          3 T  Curry flavoring (above)

          1 ea Pepper

          1 ea Salt

      

    Poach chicken by placing in a large pot with enough cold water to

    barely cover. Add peppercorns, bay leaf, parsley, thyme and one

    each: onion, carrot and celery cut into quarters. Bring to a bare

    boil with lid on; reduce heat to low and simmer for 50 minutes.

    Cool in poaching liquid, then drain, skin and shred.



    To make curry flavouring, soften diced onion in hot oil, then add

    curry powder and cook over medium-high heat for a further 3 minutes.

    Add wine and water. Boil rapidly until reduced to about 3

    tablespoons. Strain and let cool.



    Prepare curry mayonnaise by combining all ingredients until smooth.

    Place peppers in a large bowl (reserving a little for garnish),

    with chicken, pasta, salt, pepper and curry mayonnaise. Mix gently

    until well-coated. If mayonnaise mixture is too thick, add warm

    water gradually until a smooth consistency is attained.



    Place a portion of salad on bed of spinach and sprinkle reserved

    peppers on top. Assemble just before serving, as the mayonnaise

    quickly loses its fresh look.

  11. Pasta with Butternut squash sauce

    Use a bag of frozen butternut squash and cook it in the microwave.  Add Salt, Pepper, and a pinch of nutmeg.  Then Puree in blender with a cup of milk. Add fresh basil too if you have it.

    Then pour it over 1 lb cooked pasta and enjoy.

  12. First things first--Chicken Spaghetti

    Get ground chicken or chicken b*****s from grocery.  Either way, brown gently in oiled skillet.

    Add to jar of tomato sauce with garlic, 1 tsp. sugar, 1 can diced tomatoes, dried parsley and dried basil (a pinch each), 1 dash of worshishire sauce.

    Simmer for 25 mins on low heat or until chicken is fully cooked.

    Serve over pasta.

    Recipe for tonight---Lemon Chicken with Pasta

    Need:

    Lemons

    Chicken breast

    Garlic

    Olive Oil

    S&P

    Diced Tomatoes

    Capers (optional)

    Butter (optional)

    White Wine (optional)

    Flat Leaf Parsley (optional)

    Brown chicken breast in oil.  After brown, put in oven at 350 for 15 mins.

    Meanwhile add garlic, butter and wine to pan.  Let cook for 3 mins.

    Add in juice of 1 lemon.  Put chicken back into pan and toss and cook for a few mins or until chicken is fully cooked.

    Add in diced tomatoes, parsley, capers.

    Toss in pasta, garnish with chopped parsley and more lemons.
