I need some good Vegan Recipes for my family?

Particulary for a young toddler. I am having a hard time cooking Vegan because I am not use to it.

  1. A) Rice and Peas      HT  ACC  West Indian  45mins

      



    Serves 4   Hot Accompaniment   Rice  Pulses   Caribbean North American





    Ingredients

    1 x 400g/14oz tin Red Kidney Beans

    1 400g/14oz tin Coconut Milk

    450g/1lb Long Grain Rice

    1 Small onion, chopped

    1 Garlic Clove, chopped

    1 Stock Cube

    2 sprigs Thyme

    1 tbsp Butter

    Salt

    1 Whole Scotch Bonnet Pepper

    Water



    Instructions



    1. Drain the liquid from the tin of beans into a measuring jug, add the coconut milk and enough water to make up to 960ml/32fl.oz.



    2. Place the liquids in a large saucepan together with the beans, onions, garlic, crumbled stock cube, thyme and butter. Bring to the boil stirring to mix well.



    3. Add the rice and salt and stir until it comes back to the boil. Reduce heat to low and place the scotch bonnet pepper on top of liquid. Cover tightly and simmer for 20-25 minutes.



    Remove the pepper before serving. You can substitute the kidney beans with another sorts of beans. Popular choices include black-eyed beans and  pigeon peas.



    B) Soy Garlic Noodles   Veg    HT   ACC    15mins

    Serves 4     Hot   Vegetarian   Pasta   Herbs  Accompaniment    



    Ingredients

    150g/5oz Green Noodles

    150g/5oz Plain Noodles

    2 tbsp Sesame Oil

    2 Garlic Cloves, crushed

    3 tbsp Soy Sauce



    Instructions



    1. Bring a large pan of salted water to the boil, add the noodles and cook for 8 -10 minutes or until tender. Drain well.



    2. Heat the oil in a large pan, add the garlic and sauté for 1 minute then add the soy sauce and cook for a few seconds.



    3. Add the drained noodles to the soy sauce mixture and mix well. Serve immediately.





    C) Stir-Fried Noodles     HT   ACC    25mins

    Serves 4     Hot   Pork  Seafood  Shellfish  Vegetables  Pasta  Alcohol  Accompaniment  



    Ingredients

    4 tbsp Sunflower Oil

    2 Eggs, beaten

    225g/8oz Back Bacon, finely sliced

    2 Garlic Cloves, finely chopped

    1 Red Chilli, deseeded and finely chopped

    8 Spring Onions, finely sliced

    1 teasp Finely Chopped  Ginger

    2 tbsp Sesame Oil

    100g/4oz Shitake Mushrooms, thinly sliced

    75g/3oz Frozen Peas

    300g/11oz Fresh Beansprouts

    250g/9oz Cooked Vermicelli Rice Noodles

    100g/4oz Peeled Prawns

    2-4 tbsp Soy Sauce

    2 tbsp Dry Sherry



    Instructions



    1. Heat 1 tablespoon of the sunflower oil in a non-stick frying pan, pour in the beaten eggs, and let them spread out into a thin omelette. Cook for a minute or two then remove to a plate. Roll up and finely slice.



    2. Add the remaining sunflower oil to the pan and once hot, fry the bacon until it begins to colour.



    3. Add the garlic, chili, ginger and spring onions. Fry for a few seconds, then add the sesame oil and mix in the shiitake mushrooms and petits pois. Stir-fry for 2 minutes, then add the bean sprouts. Fry for a minute, before adding the vermicelli, eggs and prawns.



    4. Stir-fry until piping hot, then add the soy sauce and Sherry. Serve immediately.

    Invest in a kid friendly vegan cookbook, so the kids can even help you in perparing foods. Kids are more likely to eat something they have helped create and it gives them a sense of accomplishment.
