just tell her how gorgeous she is, how your surprised she's single because your sure guys are drooling all over her. but you can't honestly say that you are disappointed about that fact. (just something in that general area, but make sure to tell her how you feel, honestly telling her exactly what you feel (given that she likes you too) would probably be the sweetestt thing you can ever say to her.

Just be friendly and open.  Try and find something you honestly admire about her, then tell her about it.  Be yourself.  If you like the way she dresses, compliment her.  You might say something like: I like your hair--it looks nice"!  Make small talk at first, then work your way into a conversation.  Try to find common ground (things you have in common).  Then ask her if she would like to go out for lunch sometime.  Try and choose a casual , relaxed environment where the two of you can get to know each other more and talk.  If you pose a question like: "Would you like to go out with me to Friday's on Saturday night"?, And she says no.  Then ask her if another time might be better.  If she doesn't sound interested, then just let her go, and move on.  Don't pressure her about anything--girls HATE that, and it will certainly ruin things for you.
