  1. Swiss Cheese Meatloaf.  My husband makes this and I LOVE it!

  2. These are great, and you could make it bigger by adding a tube of beef sausage meat.

    Bacon and Egg Slabs

Grease a rectangular oven dish and line with flaky pastry. (I use ready rolled)

Fry off trimmed and diced bacon and allow to cool on paper towels. Place in dish and make wells to drop 4 eggs in. Pierce the yolks and cover with another sheet of pastry. Pierce the pastry several times with a knife for steam vents. Brush with milk.

Bake in a 180C oven for 35-45 minutes until the pastry is golden.

Turn out and allow to cool a little then cut in 75mm squares.

  3. Bacon puffs are made with bread and bacon and cheese,

    Cook Time: 20 minutes

    Ingredients:

12 slices Bacon, about 8 ounces

    8 slices thin-sliced bread

    2 cups shredded Cheddar cheese

    Preparation:

Cut crusts from bread then cut each slice in half. For each puff, place 2 bread halves, end to end, on a strip of bacon. Sprinkle with 3 tablespoons shredded cheese. Roll up and fasten with picks. Stand rolls on edge on a rack in a shallow baking pan. Bake at 400° 20 minutes, or until lightly browned. Serve hot.

    Makes 12 appetizer puffs.

  4. How about some bacon cheeseburgers

  5. One of my favorites is Pasta all'Amatriciana Sauce

    You can also make:

    Quiche Lorraine

    Pasta Carbonara

    German Potato Salad

Chop up the bacon finely and add the bacon to ground beef to make burgers (this will make one of the best burgers you have ever had)

  6. Olive Garden Spaghetti Carbonara

    1/4 C. flour

    1/4 C. butter

    1 qt. milk

    1/8 tsp. pepper

    1/2 tsp. salt

24 slices extra thick bacon, fried until crisp, then cut into ¼” slices

    1/4 C. olive oil

    3 C. mushrooms, sliced

    6 Tbsp. scallions, finely minced

    1 lb. spaghetti, uncooked

2 tsp. fresh parsley, finely chopped

1/2 C. Parmesan cheese, freshly grated

Melt butter in 4-quart heavy saucepan over medium heat. Stir in flour and cook for 1 minute. Add milk, salt and pepper and stir vigorously with wire whip until mixture barely comes to a boil. Reduce heat and simmer 5 minutes, whipping frequently while sauce thickens. Keep warm.

Add bacon into sauce. Heat olive oil in large skillet over medium heat. Add sliced mushrooms and minced onions and sauté until golden. Add to sauce. Cook spaghetti according to package directions. Drain well and add to the sauce along with the parsley. Blend well and transfer to serving dish. Sprinkle with Parmesan cheese and serve immediately.

  7. Slice some yellow squash longways and put on a baking sheet. Drizzle olive oil and put one slice of cooked bacon on it, then cover with cheese. Then bake it just enough to soften the squash and melt the cheese. Those are delicious!

EDIT: Any kind, but usually we just use cheddar.

  8. If you have other options and are only eating so as not to waste  brown and crumble then freeze in ziplock it will keep for 6 months to be added to anything when needed and not tired of it

  9. Chopped, fried bacon is really great in pasta sauces or in soups and stews.  It's one of my favorite things to use for the meat in sauces and soups because it has a strong "meaty" flavor and a little bit goes a long way.  In these troubled economic times, bacon is cheap and a little bit in a potato cheese or cream of broccoli soup makes for a very hearty soup that really tastes like there's a lot of meat in there.  The same thing for pasta sauces.  There's nothing like a little bit of bacon in a marinara or alfredo sauce to make it taste nice and meaty without adding a lot of ground meat or chunks of ham.  Give it a try.

Have you ever had pineapple chunks wrapped in bacon and broiled?  That's one of my favorite appetizers.   Mmmmm!  Just wrap a chunk of pineapple in half a slice of bacon, stick a toothpick in it to hold it together & put it in a pan in the bottom of the oven on broil for 5-10 minutes.

  10. bacon bundles

get cans of whole green beans, drain and rinse

wrap four or five beans with a half strip bacon, secure with toothpick, and place in a casserole dish.

pour catalina dressing over each bundle and bake for 30 minutes on 350.

alternate if you do not like catalina:  you can use Italian dressing or just top with brown sugar.

  11. Pasta Carbonara  There are many good recipes online for this.  Giada has a really good one and another is:

  12. I love love love this recipe.

    Chicken Marsala

    Ingredients:

    olive oil

    4 thin chicken breast cutlets

2 oz. low salt bacon cut into 1/4 inch pieces

    1/2 c. flour

    coarse salt

    ground pepper

    1/2 cup dry marsala wine

    4 T. heavy cream

    minced fresh flat-leaf parsley

Coat a large skillet with olive oil and set over medium heat. Add bacon and cook just until crisp and lightly browned. Remove with slotted spoon and set aside. Leave fat in pan.

Pour flour on a plate. Pat cutlets dry. Season lightly with salt and pepper, then dredge in flour.

Heat pan with bacon fat over medium heat. Add a touch more olive oil if necessary to make approximately 2 Tablespoons. When fat is hot, shake excess flour off cutlets and place in pan. Saute, turning once until browned on both sides. Think cutlets should only take a few minutes per side. Remove cutlets. Pour excess fat from pan. With pan over medium heat, add Marsala and scrape browned bits from the bottom of the pan. Cook Marsala until it is reduced by one quarter.

Stir in cream and simmer until you get a nicely thickened sauce. Return the chicken and bacon to the pan and turn the cutlets to coat and reheat for a minute. Serve with sauce on top with sprinkling of parsley.

Serve with fresh, steamed squash and it is wonderful!

  13. Make quiche with bacon and cheese

  14. I like to cook up some bacon. Just before it start to get crispy add some fresh green beens, or asparagus. Add some pine nuts or sliced almonds just before serving.

Or wrap bacon around dates and bake. Or wrap them around 2-3 water chestnuts-fry in a skillet, or wrap around shrimp and bake at 350 for 10-15 min, remove from oven sprinkle with shredded sharp chedder cheese and return to oven for about 3-4 min. Yumm.

  15. Blt Pasta - a favorite here. Sometimes in summer, I add some grilled chicken to it and make it a main course dish. Delish

This quick-to-make dish really does taste like the sandwich, only

better. Be sure to chop and mince the ingredients before you start.

    1/4 C. olive oil

    1/2 tsp. salt

    1/2 tsp. white pepper

    1 tsp. minced garlic

    1/2 tsp. minced fresh basil

    1/2 tsp. minced fresh oregano

    1 1/2 C. diced Roma tomatoes (about 3 tomatoes)

    1/4 C. diced red onion

1/2 C. fresh bacon pieces, cooked crisp and

    crumbled (about 1/2 pound bacon)

9 oz. pasta, cooked according to package directions

    Bibb lettuce, for garnish

Warm olive oil in a 12-inch skillet over medium-low heat. When the

oil is warm, but not popping, add salt, pepper, garlic, basil and

oregano; cook 1 minute, stirring. Add tomatoes, red onion and bacon

pieces; cook 1 1/2 minutes. Add pasta and toss all together. Serve on lettuce liner, or a shallow bed of lettuce if using grilled chicken. Adds a great texture to the salad

    Serves 2 to 4.

  17. Mac & cheese with bacon.

  18. Grilled chicken sandwiches with cheddar, guacamole, and Bacon.  We love 'em at our house.  Having them on fresh semolina bread , charred slightly on the grill. So good. Serve w/ grilled asparagus.

  19. What about bacon wrapped shrimp or scallops.  Or you can wrap bacon around pork tenderloin medallions and cook them off.

Loaded baked potatoes - bacon, cheese, sour cream, chili....  not too healthy, but oh so yummy.

Or what about club sandwiches?  Turkey, lettuce, tomato, bacon...  BLT salads....

Or if you were my husband, just the bacon alone.   LOL  That's why I don't buy it often.  I need to buy 2lbs, because he will eat most of it while I'm cooking it off to make sandwiches.
