How about the invention of the vaccine. You could start with Edwar Jenner, inventor of the small pox vaccine which is the building blocks for most every other vaccine. He infected a boy with cowpox which is milder strain that was also close enough related to smallpox to trigger an immune response to kill of any smallpox introduced into one's system immediately. The first vaccine was born saving in many ways the entire population from dying off.
