I need some quick (like 10 minute avg.) vegetarian recipes please?

I am a strict vegetarian without the time or patience to sit down for a good meal. I have a very narrow diet and would like to broaden it up a bit and make it somewhat exciting. As long as it's healthy and somewhat tasty, I'm cool with it.

  1. A  few quick meals I enjoy.  Stir Fry Veggies with fresh veggies.  Fruit salad, three bean salad, any veggies raw.  


  2. Well I don't know of anything that actually takes ten minutes, except quesadillas and salads. Even pasta dishes take at least 20 minutes I'd say. But there are plenty of things that require minimal effort. Also remember that many stews and casseroles require 20 minutes of prep and just sit on the stove or in the oven for an hour or so. A good resource is Vegetarian Cooking for Everyone by Deborah Madison. It has some great recipes. Epicurious.com also has great recipes, and it's always useful to have a Joy of Cooking on hand.

    I'm a vegetarian also, and I recently moved in with my boyfriend and have been doing most of the cooking. What I find really helpful is learning to make several dishes each week  so that you can have leftovers the rest of the time. Sauces, soups, and caseroles can also be frozen for storage, so you can do all your weeks' cooking at one time if you want to. My advice: learn to make a good tomato sauce, pesto sauce, one or two simple soups, and a caserole dish or two. Then you'll always have some fallbacks and you can add new recipes if you feel like it. I usually make a caserole (macaroni caserole is my favorite) and a soup or stew each week. Then I can make a simple tomato sauce for pasta another night and eat leftovers most of the week. Quesadillas are quick to whip up on nights when I don't have energy to cook.

    Quick tomato sauce (20-30 minutes):

    28-ounce can diced tomatoes

    2-5 tablespoons olive oil

    1-4 garlic cloves

    1/4 cup onion

    Combine ingredients and simmer for 20-30 minutes, until tomatoes have broken down. Add salt and pepper to taste. (From Vegetarian Cooking for Everyone). This sauce is really good, easy to add ingredients to if you want to (basil, extra garlic, oil, oregano, cheese, etc.) And you do pretty much nothing to it and it turns out good.

    Rice pilaf: Saute onion, carrots, celery, and other hard veggies you may want to add until onion is translucent in oil or butter. Then add rice, until rice is covered in oil. Add water, bring to a boil, reduce heat and cover until rice is tender.

    For Spanish rice, make rice pilaf but add chili powder, oregano, some butter, and, if you like, some Southwest style frozen veggies (corn, beans, peppers, etc.) Serve with beans and tortillas or quesadillas.

    Asian veggie stir fry with tofu: Buy a pack of frozen veggies and saute (fresh veggies work too, of course, but chopping them takes longer, so if you want a really quick meal, use frozen). When veggies are thawed, add tofu. Stir in store-bought (or homemade) Asian stir-fry sauce. Serve with rice. This takes about 15 minutes to make.

    My other advice is to keep some veggies you like on hand, and make additions to store-bought stuff you may prepare. If you eat canned soup a lot, keep some cheese, parsley, and other ingredients on hand that you can throw in to add some freshness and make something simple your own. Same goes for leftovers - feel free to add to them and experiment.

  3. Grilled veggies:

    Slice up some tomatoes, bell peppers, and zucchini into 1/4 inch slices and put them on the grill for about 10 minutes. You can find an iron grill pan at a camping or outdoor store to grill veggies on your stove top.

    Then drizzle with olive oil and balsamic vinegar. I like mine with ranch dressing.

    Cucumber garbanzo bean dip:

    Peel and chop 1 cucumber and put in blender. Add 1 can drained garbanzo beans, 1 cup plain yogurt, spices, salt and pepper. Blend until smooth.

    Good dip for baked potato wedges, too.

    Tomato mozzarella salad:

    Slice 1 large tomato and some mozzarella cheese. Alternate layers of tomato with cheese on a salad plate. Drizzle with olive oil and balsamic vinegar. Awesome cold, equally awesome hot when put in microwave on high for 45 seconds until cheese is melted.

    Gazpacho soup:

    3 cups tomatoes, red ripe, seeded and diced

    2 cups red bell pepper, diced medium

    2 cups red onions, diced medium

    1/2 cup celery, diced medium

    2 cups cucumber, diced medium

    1 teaspoon garlic, minced

    1/4 cup red wine vinegar

    2 cups organic vegetable juice

    pinch cayenne

    1 teaspoon cumin

    Method

    Mix diced tomato, peppers, red onions, celery and cucumber together in a medium bowl. Divide the mixture in half and separate in two bowls.

    Add garlic to one of the bowls and empty into blender. Add vinegar to the blender and puree until smooth.

    Add the vegetable juice, cayenne and cumin to the blender. Blend.

    Add the puree to the bowl of diced vegetables.

    Refrigerate overnight. Garnish with lemon and cilantro

I love making healthy and quick pizzas by buying flatbread or pitta bread and spreading with tomato passata, then topping with rocket or baby spinach, slices of fresh tomato, olives, feta and mozzarella - or whatever I have in the fridge. Bake in a really hot oven for about 10 minutes or until the cheese has melted. Really tasty and so quick!

  5. You should try Uncle Ben's 90 second rice. I love them. There are many flavors and they are so easy. Just tear the bag, cook 90 seconds, and eat.

  6. my favorite is yam and black bean quesadillas, and im not even a vegitarian. my vegitarian friend got me hooked on it.

    you take a yam and grate it with a cheese grater so its stringy, then take a little pinch of cumin, and a can of black beans. mix that together into a bowl and cook over a stove top until warm. once warm, remove from pan and put it in a bowl.

    then take the same pan, add a little olive oil, and put in a tortilla shell. add the yam and black bean mixture to one side, and top with shredded monteray jack cheese. then close the tortilla shell and let cook until both sides are brown.  once its ready i put salsa on top of the quesidilla.

  7. Stuffed Pancakes

    1/2pt Milk

    1 beaten Egg

    4oz Plain Flour

    Whisk together. Takes 2 mins. tops

    Stir fry vegetables - Sliced/chopped - takes 2 mins

    Grated Cheddar Cheese - 1 min.

    Make pancakes  at the same time stir fry veg, roll veg in the pancakes and sprinkle with grated cheese, place under hot grill - serve

  8. I've got 2 veggie dishes I love to make that are quick and easy.

    1. Curried tofu - simmer cubed firm tofu in pre-made curry sauce until warmed through.  I do prepare my tofu in advance but that's optional. Slicing it, drizzle olive oil and soy sauce over it and bake 10-20 minutes at 400F and keep this on hand. Just improves the texture and flavor.

    2. Stir fry. I keep chopped veggies on hand or use leftovers so it's done in 5-10 minutes.
