Question:

I need some quick meal ideas?

My husband is going to be out-of-town for training in a couple of weeks for 2 weeks. I don't want to prepare a big meal every day just for me and my 3 year old but I want him to eat healthy. I also have a 5 month old and I work full time so I need some quick (small) meal tips. Can anyone give me some new ideas?

  1. My mom makes some chicken stuff and it is so easy to do. You can make as much or as little as you want. All you do is cook the chicken in a skillet, making sure theyre bite size pieces, add some brown sugar and ketchup (that has been previously mixed), and youre done. It sounds like a really gross mixture, but it is so good. Then you can make homemade mac and cheese with it. Best/quickest meal ever. Also, if you want to do like a crockpot meal ahead of time, a quick little thing would be the little miniature hotdogs with grape jelly and mustard. That way you can make it a night ahead of time and just turn it on for an hour or so when you get home to warm it up. My mom usually makes it for like parties and stuff, but itd be good as a meal, too. These are really quick things and you can make as little as you want, so its really good. Pancakes are always a good thing too, though its not like thats out of the ordinary. Well, if all else fails, go with the classics. Good luck. =]


  2. I know exactly how you feel. I make myself and sometimes the kids too, is half box of pasta with sauce and i fry little chicken. Sometimes i would make alot of food serving for 2 days. so that way i dont cook the next day, just wrap it and put it in refrigator. good luck

  3. THis is my fav. quick easy meal and it's healthy.......

    just heat up chicken strips for you and your son, make him a veggie or 2 to go with.

    Take your portion of the chicken and use it to top your salad

    salad.......euro. style mixed greens

                     grape tomatos

                     yellow bell peppr

                     bacon bits

                     half a grannny smith apple w/ you and your son and cut your half into small slices to top your salad

With it being just me and my almost 4 yr. old, I use a lot of 'instant' products.  Instant mashed potatoes, white rice, brown rice, etc.  Different pastas are nice too, whether it's macaroni, spaghetti, or noodles, since you can make just the amount you want.  Sometimes I make enough for just dinner for the two of us, sometimes I make a little extra to send with my daughter for her lunch the next day at the sitters.  I also use things like scrambled eggs for dinner, sometimes I throw in some cheese cuz my daughter doesn't like to eat it plain in slices or chunks or whatever.  I also make apple sandwiches in the sandwich maker.  (kinda like grilled cheese, but with apples and a bit of sugar and cinnamon instead)  Chicken soup is a great idea too.  My mom used to serve it for dinner with tuna sandwiches.

  5. ground beef and mac and cheese, easy healthy and delisious.  you can also do rice-er-oni(sp) and hamburger easy quick and good.  also cut some chicken breast in cubs(easy for baby to eat) and then some package mash potatos(my son loves them).  you can also put some cubs of beef and vegs in a pan put a cover on it with some beef broth and let it simmer for like 15-20mins you can also add some rice to it, very healthy and good.... i am a working mother and i don't get off work till 10pm some nights, obviously my son is already asleep however i love to cook and do these every night eat and asleep by 11, 11:30... good luck

  6. When I am tired (and trust me I am with an in home daycare) I will feed my son who is three, and myself breakfast for dinner.  Scrabbled eggs with cheese, (salsa for me), bacon and egg muffin.  He loves it and thinks of it as a treat.  And it is very easy.

    Oh and one weekend a month try cooking up about 6 meals and freeze them in one-two portion size containers.  Makes great for heating up at the last minute with no effort.

  7. Tuna and Noodles- Preheat oven to 350 degrees. Prepare a box of your favorite mac and cheese add 1 can of tuna (drained) and a can of peas. Stir it all together and pour it in a casserole dish or other oven pan. Top with cheddar cheese. Bake until cheese is melted. Serve. It is cheap, easy, not to big and good! If you don't like tuna you can use diced ham or chicken, and if you don't like peas use broccoli. Or substitute with meat and veggie of your choice.

    Chef salad- your choice of veggies, cheese and meat. I like grilled chicken, and tomatoes, radishes, green peppers, broccoli, cauliflower and cheddar cheese. Top with croutons and your favorite dressing- I like fat free western. Yum, and the baby can still eat it just give the baby the diced meat, cheese and diced veggies

    Sandwich wraps- use flour tortillas, turkey or chicken, cheese, tomatoes, lettuce and ranch dressing , roll it up.

  8. Make a lasagna and save it in the fridge, that can last for like 4 days between two people. Making a pot of spaghetti can last a long time too. Also, there's nothing wrong with just havind lunchmeat sandwiches for dinner. You can also heat up canned soup. It is also very quick and easy to get a plain frozen cheese pizza, and put your own toppings on it (the kid i babysit does this, he just adds peperoni and pineapples (which is awesome b/c i love pineapples on pizza and no one else I know does.) Just keep it quick, easy and fun.

    You can find some great ideas on this web site. I use the Food and Family magazines and substitute fat-free or reduced-fat versions for some of the ingredients.
