The pary is in 2 weeks, It will be me and my friend who is 14. There will about 20 people there

    Almond Stuffed Dates with Bacon

    1 (4 ounce ) package blanched whole almonds

    1 package pitted dates

    1 ½ pond lean thin sliced bacon

    toothpicks

    1.Preheat oven to 400 degrees.

    2.Put an almond in each date.  

    3.Cut bacon strips in thirds.

    4.Wrap a piece of bacon around each date stuffed date and secure with a toothpick.  

    5.Line a cookie sheet with aluminum foil.

    6.Place dates on foiled cookie sheet and bake for 12-15 minutes or until bacon is crisp.

    7.Drain on paper towels.  

    Serve warm.

    Flatbread with Pancetta & Asparagus

    1 package of thin crust prepared pizza shell (I use Boboli)

    Extra virgin olive oil

    1-2 cloves of garlic, minced

    1 teaspoon of thyme (really just a sprinkle over the entire pizza)

    2 ounces of pancetta, finely diced

    Sea salt (kosher if none available)

    Ground black pepper

    Very thin asparagus spears, trimmed – about 6 spears (or cut thicker ones in half length wise)

    Mozzarella cheese, grated (I use fresh mozzarella)

    1.Preheat oven to 450

    2.Put pizza shell on pizza pan or cookie sheet

    3.Drizzle shell with olive oil and scatter minced garlic all over.

    4.Sprinkle with thyme, sea salt and pepper.

    5.Spread pancetta and asparagus spears on shell.

    6.Sprinkle mozzarella all over.

    7.Bake for 9 to 12 minutes until cheese is melted and has begun to bubble.

    8.Remove from oven and sprinkle with black pepper.  Cut into pieces.

    Shrimp Cocktail & Dip

    Tarragon Mustard Sauce

    1 cup of mayonnaise

    2 tablespoons Dijon mustard

    2 tablespoons whole-grain mustard

    2 tablespoons finely chopped fresh tarragon

    Mix all ingredients together.

    (Even if you don't have tarragon, the dip is good.)

    If made the day ahead, it allows the flavors to blend.  Store in refrigerator in an air tight container.



    Fresh Cocktail Sauce

    1/4 cup prepared horseradish

    1/2 cup ketchup

    1 1/2 teaspoons lemon juice

    Mix all ingredients together.  Can be made one day ahead and stored in the refrigerator in an air tight container.

    Beef Crostini with Horseradish Cream

    36 slices (1/2 inch thick) baguette bread

    3 tablespoons extra virgin olive oil

    1 (1 1/2 pound) piece of  london broil

    salt

    pepper

    1.Preheat oven to 375

    2.Arrange bread slices on 2 heavy large baking sheets.  3.Drizzle 3 tablespoons olive oil over the bread slices.  

    4.Bake until the crostini are golden pail and crisp, about 15 minutes.  

    5.Sprinkle beef with salt and pepper.  

    6.Grill until medium rare.  

    7.Let rest then cut meat into thin slices.  

    8.Spread the horseradish cream over the crostini and top with sliced beef.  

    Horseradish Cream

    1/2 cup reduced fat sour cream

    1/3 cup low fat mayonnaise

    2 tablespoons minced fresh chives (or scallions)

    2 tablespoons prepared horseradish

    Combine ingredients.  Cover and chill.

    Do-Ahead Tip: The horseradish cream and sliced beef can be made 1 day ahead. Cover separately and refrigerate.

    Alternative: If desired, the beef tenderloin can be substituted with 1 pound freshly sliced roast beef. Since the roast beef is already cooked and can be used as is, it makes a great time-saving alternative.

    Other ideas:

    cheese & crackers

    cut up veggies (carrots, red bell peppers, brocolli, grape tomatoes) and dip

    olives

    mini- hotdogs (cocktail franks) with mustard

    salsa  & chips

    You can also buy a box of frozen mixed hor dourves.  You only have to bake them in the oven.

  3. A really fantastic one which everyone seems to love are bacon wrapped water chestnuts.

    I usually cook a whole package of bacon (cut in half first) for one minute in the microwave just to get some of the fat out, then wrap one piece ( 1/2 a strip) of bacon around a whole water chestnut and secure with a toothpick. Continue until either all your bacon or all your chestnuts are gone. Place them into a glass baking dish in a single layer and cover with Diana sauce (original flavour).  Bake at around 350F until they smell so mouth-watering that you don't want to share them, or until the toothpicks are burnt. ( anywhere from 20-40 minutes )  Enjoy!!!

  5. Chili griddled shrimp on a little gem leaf

    Button mushrooms stuffed with Stilton cheese

    Chicken satay dipped in sesame seeds on cocktail sticks

    Baby new potato's baked and topped with a little cream cheese and smoked salmon

    Make mini burgers in buns with a cocktail stick in the middle to keep it together and serve with a little paper cone of fries.

  6. The next one I am going to try is a braised short rib with blue cheese wrapped in Phyllo Dough....The show "Top Chef" featured this recipe and it is posted online with photos also, great ideas there...Good Luck!
