I need some slang words for whether you're poking or getting poked; like pitching or catching

In Brokeback Mtn. Randy Quaid (the boss) used a term I never heard before to describe what the guys were doing.  He called it 'stemming the rose". Now how that makes any sense is beyond me  If anybody knows I'd be interested in knowing where that ever came from and why this makes any sense.
