  2. The closest actual Mexican dish would be Pastel Azteca or pastel de pobre. Mexicans do not use the word casserole, which is wholly American. I think it is not a Mexican dish at all. Sounds more like something someone in the American Southwest adapted it from a Mexican recipe and Americanized it.

  3. Although it uses mexican style ingredients, it's actually not Mexican.  It is American Tex-Mex.  Another name for this casserole is "King Ranch Casserole".  It may have originated in Texas.  There's no record of who "invented" it.
