Question:

I need to bake a cake for my mother's 66th birthday.?

I already made a white cake with strawberries and powdered sugar allover the frosting... that my son ate half of when I was laying out earlier today...what do you suggest? I actually probably have every ingredient you could throw at me (I love to bake).

  2. I'd make the chocolate cake and frosting from the Hershey's cocoa powder can.  Then you can give your mother both cakes and it will be like having chocolate covered strawberries!

    CUSTARD CAKE

    CRUST:

    1 1/2 c flour

    1/2 t salt

    1/2 c margarine

    FRUIT LAYER:

    1 can fruit* -- 28 ounces --drained

    1/2 c sugar

    1/2 t cinnamon

    CUSTARD LAYER:

    1/2 c fruit juice*

    1 large egg -- slightly beaten

    1 c evaporated milk

    * reserve 1/2 cup fruit juice when draining fruit.

    Combine flour, salt, and room temperature margarine, mix with pastry blender as your would pie crust, until it resembles coarse meal. With the back of a spoon, press mixture firmly onto the bottom and half way up the sides of a greased 8-inch square pan.

    Drain fruit very well, and reserve 1/2 cup of juice for custard layer. Arrange slice fruit on top of crust in pan. Then combine sugar and cinnamon and sprinkle evenly over the top of the fruit. Bake 20 minutes at 375 degrees.

    Mix fruit juice, egg and milk. Pour over fruit, and bake another 30 minutes or until custard is firmly set, except in center. The center becomes firm on standing.

    APPLE AND RUM CUSTARD CAKE:

    * Apple And Rum Custard Cake

    * Yield: 8 servings

    * 1 1/2 c flour, unbleached, unsifted

    * 5 tb sugar

    * 1 tb lemon rind, grated

    * 2/3 c butter or margarine

    * 1 egg yolk

    * 1 tb milk

    * 1/2 c soft bread crumbs

    * 2 tb butter

    * 4 c tart apples, sliced

    * 1 tb lemon juice

    * 1/4 c sugar

    * 1/4 c raisins, soaked in 1/4 cup rum

    * 3 eggs, beaten

    * 1/3 c sugar

    * 1 3/4 c milk

    Directions

    1. To make crust, mix flour, sugar, and lemon rind. Cut in butter

    2. or margarine until mixture resembles coarse crumbs.

    3. Add egg yolk and 1 T of milk, mix gently to form a dough.

    4. Pat into bottom of a 10-inch Springform pan that has sides only

    5. greased. Press dough up sides of pan for 1 inch.

    6. Toss together bread crumbs and melted butter. Spread evenly over

    7. pastry crust. Toss apple slices, lemon juice, and 1/4 c of

    8. sugar.

    9. Spread apples over crumbs. Drain raisins, reserving rum, and

    10. sprinkle raisins over apples. Bake in a preheated 350 degree F.

    11. oven for 15 minutes. Beat eggs and sugar until thick and lemon-

    12. colored. Stir in milk and reserved rum. Pour custard over

    13. apples and bake for 45 to 60 minutes at 350 degrees F. until

    14. custard is set. Cool completely before serving. Do NOT remove

    15. springform pan until cool.

    STRAWBERRY CUTARD CAKE:

    * Butter cake:

    * 170 grams flour

    * 1 tsp baking powder

    * 1/8 tsp salt

    * 125 grams butter, unsalted at room temperature

    * 250 grams granulated sugar

    * 2 eggs

    * 1 tsp vanilla extract

    * 1/2 cup whole milk at room temperature

    * Filling:

    * 2 cups full cream milk

    * 1 tsp vanilla essence

    * 125 grams sugar

    * 4 egg yolks

    * 50 grams cornstarch

    * 100 grams butter.

    * ½ cup whipping cream, whipped with 2 tbsp icing sugar.

    * ¼ cup diced strawberries

    * 10 strawberry halves

    * Blanch Almonds

    * Icing sugar

    1. Cake:

    2. Preheat oven to 375F.Grease a 20cm cake pan.

    3. In a bowl, cream butter and sugar for 3 minutes till light and fluffy. Add eggs one at a time. Each should be beaten for 1minute.Add the vanilla and beat again scraping the bowl sides with a rubber spatula.

    4. Sift together the flour, baking powder and salt and add one third to butter mixture and beat. Add one third of the milk and beat on low speed. Continue alternately adding the ingredients in the same manner ending with the last third of the flour mixture.

    5. Pour the batter in the pan and spread it evenly leveling the top.

    6. Bake for 55-60 minutes till springy to the touch and a toothpick inserted in the center comes out clean. Transfer to a wire rack and cool completely.

    7. Filling:

    8. Bring the milk and the vanilla to a simmer in a heavy saucepan. Meanwhile, beat the sugar, egg yolks and cornstarch till smooth. Slowly add hot milk whisking till all combined. Put the mixture back in the saucepan and cook over medium heat till thickened and bubbly. Remove from heat and add the butter, whisk till butter melts. Measure 1/3 cup of the custard and set aside, cool completely. Fold the whipped cream into 1/3 cup of the custard mixture till combined.

    9. Assembling:

    10. Cut the cake horizontally in two layers. Spread the cream mixture over the first cake layer and smooth the top with a spoon and sprinkle some diced strawberries on top .Cover with the second cake layer and spread the custard mixture over the top .Decorate with the strawberries, Almonds and icing sugar. Chill.

  5. strawberry and vanilla cake or with chocolate which ever with strawberry in the middle and some strawberry slices cut on top with white frosting then a chocolate white frosting,i use to bake a lot as a kid but now i'm kinda clueless but i still know a lot of recipes but i barely ever ate which is weird because i know so much lol xD
