I need to do something with this turkey I bought

I wanted to make a meatloaf. Do you have any good recipes or any other ideas of what to do for dinner?

  1. 1lb ground turkey.

    1 packet of Lipton Beefy Onion soup mix

    1/2 onion minced.

    4 cloves of garlic minced

    1 sleeve of soda crackers finely smashed. (kids love to do that part)

    1 1/2 tablespoons of Worschester sauce

    2 tablespoons of Ketchup plus extra to put on top

    2 teaspoons salt and pepper

    1 teaspoon onion powder

    1 eggs

    Milk

    Optional, I use 1/2 lbs of pork sausage in my meatloaf, but doesn't have to be used

    Mix ingredients together in bowl. Add milk to mixture until the consistance is almost like cooked oatmeal. The crackers will soak up the egg, and milk, so make sure its mixed well. Form into "loaf" in baking dish, and slather ketchup on top. (brown sugar and tomato sauce will do just as well) Bake at 400 degrees for about 45 minutes.

    Turkey Squash Casserole

    INGREDIENTS:

    1 pound ground turkey

    1 tablespoon vegetable oil

    2 cups sliced yellow summer

    squash

    1 medium onion, chopped

    2 eggs

    1 cup evaporated milk 1 cup shredded mozzarella

    cheese

    6 tablespoons butter or

    margarine, melted

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1 cup crushed saltines

    DIRECTIONS:

    1. In a large skillet, cook turkey in oil over medium heat until no longer pink. Add the squash and onion. Cook until vegetables are crisp-tender; drain.

    2. In a bowl, combine eggs, milk, cheese, butter, salt and pepper. Stir into the turkey mixture. Transfer to a greased 8-in. square baking dish. Sprinkle with the cracker crumbs. Bake, uncovered, at 375 degrees F for 35-40 minutes or until heated through.

    Asian Roll Lettuce Wrap

    INGREDIENTS:

    1 pound ground turkey

    1 tablespoon light soy sauce

    1 teaspoon minced garlic

    2 teaspoons minced fresh

    ginger root

    1 cup brown rice

    1 cup water

    16 large lettuce leaves

    1 cup shredded carrots

    1 cup green onions, thinly

    sliced 1 cup sliced red bell pepper

    1 cup sliced radishes

    1/3 cup light soy sauce

    1/3 cup water

    3 tablespoons fresh lemon

    juice

    2 teaspoons minced garlic

    1 tablespoon minced fresh

    ginger root

    1 teaspoon sugar

    DIRECTIONS:

    1. In a medium bowl, mix together ground turkey, 1 tablespoon soy sauce, 1 teaspoon minced garlic and 2 teaspoons ginger. Form into 16 meatballs and roll into ovals. Cover and refrigerate.

    2. In a medium saucepan over medium heat, combine rice with 2 cups water. Bring to a boil, reduce heat and simmer for 20 minutes, or until rice is tender.

    3. Preheat the grill or broiler. Arrange rice, lettuce leaves, carrots, scallions, radishes and red peppers onto a serving platter or place each into a small bowl. In a medium bowl, mix together 1/3 cup soy sauce, 1/3 cup water, lemon juice, 2 teaspoons garlic, 1 tablespoon ginger, and sugar. Divide into 4 small dipping bowls.

    4. Thread two meatballs onto each 10 inch skewer. Grill or broil for 10 to 12 minutes, turning occasionally to brown all sides. If broiling, line the broiler pan with aluminum foil and drain fat after 6 minutes.

    5. To eat, place a leaf of lettuce onto the palm of your hand, spoon on a little rice, then a meat roll, and a few of the vegetables. Roll up and dip in dipping sauce or spoon sauce over.

    Stuffed Peppers with Turkey and Vegetables

    INGREDIENTS:

    4 green bell peppers, tops

    removed, seeded

    1 pound ground turkey

    2 tablespoons olive oil

    1/2 onion, chopped

    1 cup sliced mushrooms

    1 zucchini, chopped

    1/2 red bell pepper, chopped

    1/2 yellow bell pepper, chopped

    1 cup fresh spinach

    1 (14.5 ounce) can diced

    tomatoes, drained

    1 tablespoon tomato paste

    Italian seasoning to taste

    garlic powder to taste

    salt and pepper to taste

    DIRECTIONS:

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.

    3. In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.

    4. Return peppers to the oven, and continue cooking 15 minutes.

    Enchilada Stuffed Shells

    INGREDIENTS:

    15 uncooked jumbo pasta

    shells

    1 pound lean ground turkey

    1 (10 ounce) can enchilada

    sauce

    1/2 teaspoon dried minced

    onion 1/4 teaspoon dried basil

    1/4 teaspoon dried oregano

    1/4 teaspoon ground cumin

    1/2 cup fat-free refried beans

    1 cup shredded reduced-fat

    Cheddar cheese

    DIRECTIONS:

    1. Cook pasta according to package directions; drain. In a nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in enchilada sauce and seasonings; set aside.

    2. Place a rounded teaspoonful of refried beans in each pasta shell, then fill with turkey mixture. Place in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray.

    3. Cover and bake at 350 degrees F for 25 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

    try roast turkey with honey-mustard sauce.


  5. Here is a yummy recipe that is healthy and weight watcher friendly. It says to use ground beef but turkey would work the same. Enjoy!

  6. I'm told I make a great meatloaf and heres my recipe:

    I use about 1 lb- 1 1/2 lb ground turkey

    Sautee 1/2 onion and 1/2 green pepper and 2 garlic cloves in oil add to ground meat

    crush 1 sleeve of ritz or any other saltine cracker into fine crumbs and add to the meat and veggie mixture

    beat 2 eggs and add

    Season with 1/2 envelope of chicken (if using turkey) or beef (if using ground beef) buillion packets

    garlic powder

    onion powder

    ground pepper

    1/3 cup of heinz 57 sauce

    2 Tbls ketchup

    Mold into a loaf and bake in a 9x13" pan at 375 for 35-40 min.

    While baking, I mix 1/2 c tomato ketchup and 1 Tbl of brown sugar and add to top of meatloaf 10 min before its done and then go back and base one more time in the last five minutes.

    I hope you use this recipe, its really a keeper.

    DIRECTIONS

    In a bowl, combine egg substitute, 1/3 cup pineapple and the seasonings. Add bread crumbs; mix well. Crumble meat over mixture; mix well. Press into an 8-in. x 4-in. x 2-in. loaf pan coated with nonstick cooking spray. Top with 1 tablespoon pineapple. Bake at 350 degrees F for 1-1/4 hours or until a meat thermometer reads 180 degrees F. Let stand 5 minutes before serving.     Incredibly Cheesy Turkey Meatloaf ---

    INGREDIENTS

    2 pounds ground turkey

    1 cup milk

    1 cup Italian seasoned bread crumbs

    2 eggs

    1 teaspoon salt

    1/4 teaspoon pepper

    3/4 pound Colby cheese, cut into 1/2-inch cubes

    1/2 cup ketchup (optional)



    DIRECTIONS

    Preheat oven to 400 degrees F (200 degrees C).

    In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.

    Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

    2 1/2 teaspoons dried sage

    1 1/2 teaspoons dried rosemary

    1/2 teaspoon dried thyme

    1 Golden Delicious apple, cored and chopped

    3/4 cup dried cranberries

    1/3 cup minced fresh parsley

    1 cooked turkey liver, finely chopped

    3/4 cup turkey stock

    4 tablespoons unsalted butter, melted

    DIRECTIONS

    Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.

    In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.

    INGREDIENTS

    1 pound mild Italian turkey sausage, casings removed

    1 pound ground turkey

    2 eggs, beaten

    1 1/2 cups rolled oats

    1/2 cup chopped onion

    1/2 cup milk

    1 tablespoon Worcestershire sauce

    1 teaspoon Italian-style seasoning

    1/2 teaspoon garlic powder

    1/2 teaspoon salt

    2 cups spaghetti sauce

    5 dashes hot pepper sauce

    1 tablespoon Worcestershire sauce

    1/2 teaspoon liquid smoke flavoring

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    In a large bowl, combine the ground turkey, sausage, eggs, oats, onion and milk. Season with 1 tablespoon Worcestershire sauce, Italian seasoning, garlic powder and salt. Mix well and form into a loaf. Place into a 9x13 inch baking dish.

    In a separate small bowl, mix together the spaghetti sauce, hot sauce, 1 tablespoon Worcestershire sauce and liquid smoke. Smooth over the entire meatloaf.

    Terrific Turkey Chili ---

    INGREDIENTS

    3 tablespoons vegetable oil, divided

    1 1/2 pounds ground turkey

    1 (1 ounce) package taco seasoning mix

    1 teaspoon ground coriander

    1 teaspoon dried oregano

    1 teaspoon chili pepper flakes

    2 tablespoons tomato paste

    1 (14.5 ounce) can beef broth

    1 (7 ounce) can salsa

    1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree

    1 (7 ounce) can chopped green chile peppers

    1 medium onion, finely chopped

    1 green bell pepper, diced

    3 medium zucchini, halved lengthwise and sliced

    1 bunch green onions, chopped

    1 cup sour cream

    1 cup shredded Cheddar cheese

    DIRECTIONS

    Heat 1 tablespoon of oil in a large stock pot over medium-high heat. Crumble turkey into the pot, stirring with a wooden spoon to break apart as much as possible. Season with taco seasoning mix, coriander, oregano, chili flakes, and tomato paste, and mix until meat is evenly coated with seasonings. Continue cooking, reducing heat if necessary, until turkey is well browned.

    Pour in beef broth, and simmer to reduce liquid slightly, about 5 minutes. Add salsa, tomatoes, and green chilies, and continue cooking at a moderate simmer for ten minutes. Adjust the thickness at any time you feel necessary by adding water.

    While chili is still cooking, heat one tablespoon of oil in a large skillet over medium-high heat. Cook onion and green bell pepper, stirring occasionally for 5 minutes, or until onion is translucent and bell pepper is lightly browned. Add onion and bell pepper to the chili, and continue cooking at a very low simmer.

    In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the zucchini, and cook stirring occasionally, for 5 minutes, or until lightly browned. Add the zucchini to the chili, reduce heat, and continue cooking 15 minutes more. Again, adjust the consistency with water as needed.

    Ladle chili into serving bowls. Top with sour cream, green onion, and cheddar cheese, and serve.

    TURKEY SALAD WITH CRANBERRY DRESSING

    1 bunch salad greens

    1 med. potato, cooked, peeled & cut into chunks

    1/2 c. mandarin orange sections

    Radish slices

    2 c. cooked turkey or chicken

    1 c. sliced cucumber

    1 c. fresh mushrooms

    CRANBERRY DRESSING:

    3/4 c. whole cranberry sauce

    1/8 tsp. ground cinnamon or nutmeg

    3/4 c. mayonnaise

    Line a large serving platter or bowl with desired salad greens. Arrange turkey or chicken with potato pieces, mandarin oranges, cucumber and mushrooms over greens. Garnish salad with radish slices. To prepare dressing, place the cranberry sauce, mayonnaise and cinnamon or nutmeg in a blender container or food processor bowl. Cover and blend until dressing is smooth. Pass dressing with salad.

    2.TURKEY SOUP

    1-1/2 lbs diced, cooked turkey

    3 medium turnips, peeled and diced

    1 medium white onion chopped

    4 slices center cut bacon, diced

    1/4 lb pork sausage

    1 - 12 oz can Great Northern Beans

    1 - 12 oz can chicken broth (low sodium preferred)

    1 - tbsp dried Herbes De Provence (sage, thyme, rosemary)

    2 - tbsp olive oil (may need 1 to 2 tbs. more)

    water

    In dutch oven or large heavy sauce pan, add olive oil, bacon and sausage and saute at medium heat until browned. Add turnips and onions and continue to saute until turnips are softened and onions are translucent. (You may need to add a drizzle of olive oil as the turnips will draw moisture)

    After the turnips and onions are ready, stir in turkey, Great Northern Beans, and chicken broth as well as 24 oz. of water. Reduce heat to low and simmer for 5 minutes. Add Herbes De Provence and stir. Continue to simmer at low heat, stirring occasionally, for 15 to 20 minutes.

    Makes approx. 8 servings
