What I suggest is that you do a local google or yahoo search of cuban/soul food caterers in the area.  Check out there websites or call ---- talk to them about what type of food you wish to cater, # of people, price quotes, logistics.....

Go visit them & personally sample the food, that's the most important.  That's the best way to chose a caterer:  good food, quality & value for the $.  You dont want to pay $$ for bad food.
