I need to find out my ukranian grandmas easter cake recipe??!!?

My grandma(Baba) was ukranian and every year on easter she would make this delicious cake with a "mocha flavored" frosting. all i remember was that it was an egg based cake that she made in a bundt pan and the frosting was a thin glazy-like coffee chocolate ish flavor. if you know what this is called or have a recipe please share!! she has been gone 9 years and i never was able to get her recipe. it would mean the world to me if someone knew something.

  1. It is called p***a...here is a recipe.  I saw the glaze somewhere and will get back to you is I find it again.

    TRADITIONAL EASTER p***a (My Grama Markiw's)

    1 tsp. Sugar

    8 - 12 eggs (beaten)

    1 c. Lukewarm water

    1/3 c. Sugar

    3 pkgs. Dry yeast

    1/2 c. Melted maragarine

    3 c. Scalded milk (lukewarm)

    1 Tbsp. Salt

    5 c. Flour

    9 to 10 c. Flour

    Dissolve sugar in lukewarm water and sprinkle yeast over it. Let stand 10 minutes. Combine softened yeast with lukewarm milk and 5 cups flour. Beat until smooth. Cover and let rise in warm places until light and bubbly.

    Add beaten eggs, sugar, melted margarine and salt and mix thoroughly. Stir in enough flour to make neither too soft nor too stiff. Knead until it doesn't stick to hand. Turn on floured board and knead until smooth and satiny. Place in greased bowl, cover and let rise in warm place until double (until 2 hrs.) Punch down and let rise again. Makes 4 or 5 small round paskas.

    Let rise in pans until almost double. (Don't over raise) Brush with beaten egg with a little water. Bake 400 degrees - 15 minutes. Then lower to 350 degrees for about 40 minutes or until nicely brown. Decorate tops with cross or braids.. Note: I use a few drops yellow food coloring to make it look nice.

    Mocha Icing

    Ingredients

    (6 servings)

    1 1/2 c Powdered sugar

    1 tb Coffee

    1/8 ts Salt

    1 Egg yolk, well beaten

    4 ts Cocoa

    1/4 c Butter

    1 ts Vanilla

    Instructions

    Sift sugar. Cream butter. Add sugar. Beat until smooth. Add remaining ingredients. Beat until well blended.


  2. I got this recipe from a Ukranian woman from Near Kiev. I thought it might interest you.

    p***a/ Easter Bread/Babka

    Mix together:

     yeast: 2 tab. sp.

     2 tab.sp sugar

     1/2 cup warm milk

    Add to:

    Mix to the white color

     12 large yokes

     1 ½ cup sugar powder

    Add to:

    Mix together:

     1 1/2cup of boiled /warm milk

     2 tea sp. salt

     8 cup flour

     ¾ melted butter

     1cup raisins

     ½ orange juice

     1 orange skin

    *Mix it good and let it stay in warm place about 4 -6 hours.

    *For this time push down the dough 2 times.

    *After you push third time you can mix it good.

    *If it’s too sticky I usually put little oil on my hands -no flour.

    *Make sure the dishes you bake it are oily too.

    *After you put the dough: 1/3 of dish* spread the yokes on top.

    *Bake the “babka” after its raise again about 35 min; t-375 in pre hot oven.

  3. My best guess is that it was honey cake - medivnyk. My sister just brought one over for us yesterday, to have for Ukrainian Easter.

    I would make it in a bundt pan, as well. It's a heavy cake and sometimes if it's made in a regular pan, the middle doesn't get cooked well.
