Question:

I need to know what a great dessert is that I could buy to bring to my class for a party!?

So we have this sort of end-of-the-term party and need to bring in a sort of "snack". Last term I brought in canolies and everyone loved them! I want to impress everyone again. Any ideas as to what I should bring? Thankyou Thankyou Thankyou!

Okay, so I know this doesn't sound fancy or exiting, but I made this recipe about fifty times in my cake decorating class at the culinary school I go to and it turned out completely amazing every time. It's simple, rich, and silky and they make EXCELLENT cupcakes. These will shock everyone, guaranteed.

    Buttermilk Cake

    Sugar 1lb 5oz

    Cake Flour 1lb 4oz

    Baking Powder 3/4 oz

    Salt 1/2 oz

    Buttermilk 9 oz

    Eggs 5 oz

    Egg Whites 7 oz

    Vanilla 3/4 oz

    Soft Butter 12 oz

    1. Coat pans with butter or pan spray.

    2. Combine dry ingredients in bowl - sugar, cake flour, baking powder and salt.

    3. Combine wet ingredients in another bowl -milk, eggs, egg whites, and vanilla.

    4. Blend butter with dry ingredients and half of the wet ingredients.

    5. Add remaining milk in several additions.

    6. Divide batter into cupcake pans (fill 2/3 full)

    7. Bake at 350 F about 20 - 30 minutes until the center springs back when touched.

    Swiss Meringue Buttercream

    Egg White 12 oz

    Granulated Sugar 24 oz

    Butter 3 lb

    Flavor (Vanilla) 2 Tb.

    Heat egg whites and sugar in double boiler to about 140 degrees (or until no longer grainy) while constantly whisking

    Whip the mixture on high speed to a meringue with stiff peaks

    Add butter slowly and let mix until completely smooth and emulsified (this can take up to 20 minutes! don't rush it)

    INGREDIENTS

    2 cups all-purpose flour

    2 cups white sugar

    1 teaspoon baking soda

    1 teaspoon ground cinnamon

    1/2 teaspoon salt

    1/2 cup margarine

    1/2 cup shortening

    1/4 cup unsweetened cocoa powder

    1 cup water

    2 eggs, beaten

    1/2 cup buttermilk

    1/2 cup margarine

    6 tablespoons milk

    1/4 cup unsweetened cocoa powder

    1 teaspoon vanilla extract

    4 cups sifted confectioners' sugar

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan. In a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt. Set aside.

    In a saucepan combine 1/2 cup margarine, shortening, 1/4 cup cocoa and water. Bring to a boil and cook for 1 minute. Pour the liquid mixture over the flour, sugar mixture; stir well. Blend in eggs and buttermilk.

    Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cake cool 10 minutes, then frost while still warm.

    To make the Frosting: In a saucepan combine 1/2 cup margarine, milk and 1/4 cup cocoa. Bring to a boil and cook for 1 minute. Remove from heat and stir in vanilla. Mix in confectioners' sugar. Pour over warm cake

    The Best Brownies

    8 tbsp unsalted butter (1/2 cup)

    4 oz unsweetened chocolate

    1 1/4 cups sugar

    1 tsp vanilla extract

    1/4 tsp salt

    2 eggs

    1/2 cup all purpose flour

    2/3 cup walnuts or pecans (optional)

    Preheat the oven to 400F and line and 8-inch square metal baking pan with foil.

    Melt the butter and the chocolate together, on top of a double boiler or in the microwave, stirring often until smooth. Stir in sugar, vanilla and salt. Add eggs one at a time, followed by flour. Stir until very smooth, about 1 minute. Add nuts, if using.

    Scrape batter into prepared pan and bake at 400F for 20 minutes.

    Meanwhile, prepare a water bath. Fill a large roasting pan with water and ice about 1 inch deep.

    When the brownies are done - and they will look a bit dry on top - take them immediately from the oven and place in the water bath. Add more ice to the water if necessary. Allow to cool completely in the bath before removing the pan and cutting the brownies.

    Store in an airtight container for up to 3 days.

    Makes 16.

  7. Why not make a tray of chocolate covered pretzels & chocolate dipped fruit. Either make it yourself or buy it from a candy store. Always seems to go over big whenever I bring it to a party. Good luck!

    Fruit Pizza - Bake a giant chocolate chip cookie on a baking sheet, spread whipped cream over the top and add fruit (fresh if possible). We use strawberries, grapes cut in half, peach, kiwi. Think of fun colors to put together.

  9. Individual cheesecakes.  I made these once, but can't find the recipe anymore...it's probably on the 'net somewhere...but the crust was made by putting a whole 'Nilla Wafer into the bottom of a mini cupcake liner and pouring the filling over it.  Soooo yummy!
