I need to know what to do with a hen n chicks plant that is blooming?

The Hen and Chick will know what to do!

  So, just enjoy the flowers.

If you don't like the look of the flowers, cut them off.  It usually doesn't hurt  the plant fo ryou to remove the flowers.  I used to

cut the flowers off my hostas all the time.

Unless you  want to change the location of them -

just leave them until the Autumn.  If you want to keep them where they are now then cover them with a lot of leaves and branches to protect them from the frost and snow.
