Question:

I need to make breakfest for 50 people?

My boyfriends mom past away and all his family is comming over to his house in the morning before her service tommorow which will be about 50 people. His sister asked me if I would help with the breakfest she said that they are going to buy some dounuts and the most likley will have coffee she said I can make muffins or whatever I feel like making. What do you guys think I should make? It needs to be more like a buffet style so pankcakes and things like that are out of the picture and I also can't be in the kittchen all morning because I want to be there to comfort my boyfriend so I hope to make most of the things tonight. I would apppreciate any help.

  1. why dont you make finger sandwiches, minitures, you cut your bread in four, you cam make them with ham, cheese, tuna, diferent flavors, its not expensive, get a loaf of bread and what ever you think they would eat, it wil ale no more than an hour to make.


  2. I think a tray of fresh fruit cut up is a good thing, plus the muffins or some breads, like banana bread, etc--you can get the mixes of those for like $1 each.

  3. So sorry for the occaisson!  Here is a simple solution for breakfast for a crowd:

    Fruit Trays

    Assortment of breads, muffins, etc (you can buy these already made at the grocery bakery)

    A variety of juices

    Coffee and fixings

    Oatmeal in a crockpot with a few toppings...guests can serve themselves

  4. well i was going to say you can do a bunch of Muffins and stuff or you can make like Cinnamon buns or something like that or even like a breakfast casserole something hot but yet easy to make and not a lot of time.. im sorry for your loss best of luck to you all

  6. Keep is as simple as you can...  lots of fruit, and Juice, and of course donuts, and muffins, english muffins, etc..... Sorry to hear your loss, and take care please... god bless...

  7. Pigs in a Blanket, cut up fruit, dry cereal, healthy muffins ... Not everyone likes sweet sugery things for breakfast, these are easy and can be made beforehand.

  8. Can you afford beagles? They already will have doughnuts that are kind of sweet so I would brig something salty like beagles with couple of different cream cheese spreads and fruit.

  9. The easy way out is the coffe and anything that goes with coffee, doughnuts,muffins,bagels keep it European in that mixing some fruit and lite cheese's will go along way the breads.

    2-3 bread platters (Bagels,doughnuts,muffins)

    2 fruit platters or bowls (apples,bannanas,grapes etc...)

    2 cheese platters (lite cheeses, swiss. provolone etc...)

    Butter and Hoeny if you got it and lots of Coffee.

  10. Firstly, i am so very sorry for your loss..and I fully understand that you would want to make the buffet as hassle free and easy as possible in order to console your boyfriend and his family.

    Dedicate a section of the buffet to muffins, toast, donuts, danish pastries, croissants, scotch pancakes, and cinnamon rolls (you can buy these all in bulk from supermarkets for a low price)..offer a selection of jams, spreads..both sweet and savoury. Practically everyone will be able to find something they like in this section.

    For the drinks bar offer coffee, tea, hot chocolate fruit teas, orange, apple and tropical juice.

    Have a few fruit bowls where the guests can help themselves to fresh fruit..apples, pears, bowls of grapes, bananas (berries would be nice but can often prove to be expensive). Bowls of tinned fruit would also be popular (peaches, mandarin etc) as well as cheap.

    As an extra element to your breakfast buffet..fill a mini fridge or cooler with a selection of fruit yoghurts, guests can mix and match fresh fruits, pastries and yoghurt for a delicious continental style fruit.

    I'm sure you'll want to keep things relatively mess free too so avoid full english breakfasts consisting of beans, hash browns, eggs etc..and keep it simple with foods that are cheap to buy and that don't need much prior preparation (in this instant you just need to open packets and wash fruit etc!)

  11. make some fruit trays,  trays of cut up veggies platter , trays of cheeses, bagels, muffins, donuts, toast, plenty pots of decaf/regular coffee, tea, plenty of juices, milk/creme...you can cut up the fruits,cheese veggie the nite b4 and spread out the rest and coffee early in the morning....

    SAUSAGE SOUFFLE

    4-5 slices cheap white bread, cubed

    2 c. grated cheddar cheese

    1 lb. sausage links (browned & cut into bite-size pieces)

    4 eggs

    1/2 tsp. yellow prepared (or spicy) mustard

    2-1/4 c. milk

    1 can cream of mushroom soup

    1/2 soup can milk

          Place bread in greased 9x13" pan.  Sprinkle with cheese.  Place sausage on cheese.  Beat eggs, mustard and 2-1/4 c. milk together, and pour over casserole.  Cover and REFRIGERATE OVERNIGHT.  Before baking, dilute mushroom soup with 1/2 can of milk and pour over casserole.  Bake uncovered at 325 for 1 hour.  Serves 10-15 (3 should be  enough to make...)

    A fruit salad would be nice with this.....  either lots of cut up fruit.... or sliced oranges... or just strawberries....or, you could make a fruit ambrosia (DO AHEAD - today).  I'd double or triple this recipe:

    FRUIT AMBROSIA

    2 c. heavy whipping cream

    1/2 c. sugar

    1 tsp. vanilla

    1/2 tsp. almond extract

    1 large can mandarin oranges, drained

    1-2 cans fruit cocktail, drained

    3-4 handfuls miniature marshmellows

         Beat cream, sugar & extracts until very stiff peaks form.  Gently fold in fruit & marshmellows.  Chill and serve in a large bowl.....  Serves 10-15 (or more)

  13. Make whatever you are comfortable making; some ideas:

    Deviled eggs- 2-3 dozen eggs (relatively inexpensive-do ahead tonight, refrigerate)

    Small size Buttermilk biscuits- can  be served at room temp; just don't refrigerate if you're serving tomorrow morning.

    Banana muffins

    Pound cake or cupcakes

    Chicken salad on dinner rolls or bread triangles

    Pimento cheese on dinner rolls or bread triangles

    Deli ham on dinner rolls

    Fruit  punch from gallon containers-less than regular fruit juice from dairy case

    Other things that will probably be needed:

    hot/cold cups, ice, tea, napkins, plates/saucers, forks, spoons

    paper towels, plastic wrap, freezer zip lock bags, toilet paper, Kleenex, creamer, sugar, diet sugar, skim milk

    Funerals are for "the living". The dead already got their reward. We the living have to "pay for their departure".

    Besides how best to comfort your bf than by being the busy woman in the kitchen. I know he'd say "Mom would have loved to see you doing that". He will have enough people around him to keep him comfortable.

    At times like this "family" or "almost family" should be in the kitchen. That's the way it was when Mom and Dad passed away. Relatives were in the kitchen with the 14 roasts, 22 gallons of kool-ade, 45 loaves of bread, and tons of pastry! That was for 45 people! Total cost $235.00 with a lot of "home brought donations (paper plates, cups, forks, spoons, etc.)

You've got a good start with muffins and donuts--the muffins you can make a bit ahead of time, so you're not preoccupied with cooking while you're trying to manage visiting too.  Also, consider slicing up some fresh fruit, such as oranges, strawberries, grapes and pineapple (buy some canned sliced ones).  This will balance out the meal a bit and make the table look pretty.

  16. A breakfast casserole is always a hit. Line a baking dish sprayed with Pam with frozen hash browns and bake till tender but not crispy. Brown some sausage. In a bowl mix the sausage, chopped onion, green chilies, American cheese, or anything that floats your boat. Mix in some eggs and pour over the potatoes and bake till the eggs are set. Serve with salsa, sour cream, cheddar cheese or what ever you like. My family prefers just salsa. Just be sure not to over bake it or it will be dry and serve it hot. Sorry about your loss but the dish will impress.

  17. quiches are easy and can be served at room temp.

    use premade pie crusts and aluminum pie plates.

    recipe for one  quiche

    one pint ricotta cheese

    three eggs

    one cup shredded cheese (swiss or cheddar)

    one cup chopped ham or one cup crabmeat

    season with a dash of cayenne, salt, pepper and parsley flakes. onion powder and garlic powder

    you can make a variety of flavors

    as long as you use the cup of cheese, you can add another cup of   most vegetables like brocolli, or spinach.  this is a fool proof recipe.

    mix well and pour into unbaked crust

    bake at three fifty in pre heated ovenn for forty five to fifty minutes or until middle of top is firm
