I need to write a very professional letter to my prof. and thank him for all his help. I don't know what to say and what to write. can you please write what you would write to thank him.

The very best thank you comes from your heart in your own words. These are the words your teacher will cherish--even if it is a bit unpolished.  You could tell him that you aren't sure what to write because his help has meant so much to you that you are having trouble finding the words.
