I open with Knight g1 to f3, how would you counter?

Counter in the center with 1... d5.

g5 maybe but not really

b8-c6 or possibly c7-c5

by the way thats a bad move for white to open (my opinion) but hey what do I know?

I would knock all the pieces to the floor and then I would knock over the table  and say that I really wanted to play draughts

I always answer your move by playing Nf6, there usually follows

             d4  d5

             c4

then after these moves I usually play either

            .... e6  which is the Queen's Gambit declined

or sometimes I play

            .....c6 which is the Slav Defence

Both of these openings are very good and are played by the top Grandmasters.
