I purchased a vacuum packed prosciutto I kept it in my suitcase for 4 days is it edible?

I purchased a large vacuum packed prosciutto in Italy. It was in my suitcase for 4 days. I thought cured meat could be kept outside of the refrigerator. Can I eat it?

  2. i would think it would be ok to eat  all that salt keeps it preserved  

  3. Was it refridgerated when you purchased it? If not, and you have not opened it, I would think it is fine. If it was refridgerated when you purchased it, it is probably spoiled now.

I am a former chef and if people knew that prosciutto was over 1 year old and aged in a large room, with NO refrigeration and allowed to rot and ferment to get the flavour, most non Italian would never even touch it, your prosciutto is fine, I have had staff leave it out for hours in a hot kitchen, it is cured and cannot go bad unless left for months in extreme heat.

    I prefer mine at room temperature, and to waste a 4 pound one is criminal, I get the impression alot of these people do not know one thing there talking about and answer willy-nilly for points, do not believe them!!,  believe me a professional chef with 20+ year experience and eaten my weight in prosciutto.

    And I have worked with Italians and in Italian restaurants in hotels, and there are some from Italy or of Italian decent who do not know how it is made nor what is in it and mortadella.

  5. No, it needed to be kept at either 41F or below, or 135F or above.

    Just because it was vacuum packed does not mean it is safe,some bacteria do not need oxygen to grow.
