I play Field Hockey. How do you become like an umpire in Australia (NSW)?

You have two fairly easy options on this question.  First, during warm-ups of your next game, approach the umpire and ask him/her to discuss officiating with you after the game.  Another option is to ask your coach or team manager for contact information for the person who assigns the umpires for your games.  I officiate ice hockey rather than field hockey but officials, regardless of the sport, almost always get started at the grass roots level.
