I want a different way to roast gammon any ideas?

I boil my gammon first cook it till it reaches 60c, then i take off the netting & the rind then cut fat into dimonds put cocktail cherrys in the gaps and cover with honey, then roast for about 20 mins or until its  golden.

watch out the honey can burn very qickly. take out of the oven and bast the gammon leave to rest for about 15/20 mins to rest, if you are using it for cold ham i put in the fridge for at least 12 hrs before i slice it

baste it in honey & sprinkle with black pepper....lovely!
