  1. Slice lemons add sugar to taste, pour boiling water over and stir well.

    Leave to cool, very refreshing

        * 6 un waxed lemons

        * 700ml water.

        * 125g sugar

        * 200ml freshly squeezed lemon juice

    Method

    1 Thinly pare the zest of 6 un waxed lemons using a vegetable peeler. Put in a heatproof jug and pour on 300ml boiling water. Stir and set aside for an hour.

    2 Meanwhile put 125g sugar in a small pan with 100ml water and heat slowly until the sugar dissolves. Pour into a large jug and leave to cool.

    3 Drain the infused zest through a sieve into the large jug and discard the zest. Add 200ml freshly squeezed lemon juice, 300ml cold water and some ice cubes. Stir well and serve.

    Ingredients

    4 unwaxed lemons, washed

    100g caster sugar

    Method

    Using a vegetable peeler, thinly peel the zest from the lemons, leaving as much white pith behind as possible. Squeeze the juice from the lemons. Place the zest, lemon juice and sugar in a large heatproof jug.

    Pour in 600ml boiling water and stir until the sugar has totally dissolved. Cover, and leave to cool completely. Now, strain the lemon mixture into a serving jug, and discard the zest. Dilute with 400ml chilled water and sweeten with extra sugar to taste. Serve decorated with lemon slices, mint leaves and crushed ice.

    Ingredients:

    6 lemons

    6 cups cold water

    1 cup sugar

    Preparation:

    Juice your lemons, and you should get about 1 cup of fresh lemon juice. You can use bottled if you must, but the flavour won't be as crisp. In a large pitcher, mix lemon juice, water and sugar. Stir lemonade well and serve over ice, with a lemon slice or two to garnish.

    Strawberry Lemonade

    Bring 1 cup sugar and 1 cup water to a boil.  Let the mixture cool.  Slice 1 cup strawberries and juice 6 large lemons.  Stir the syrup,

    strawberries, and juice together with 4 cups water and 4 cups ice.  Garnish with whole berries.  Guests can serve themselves from a spigot jar.

    Method

    1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.

    2 While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.

    3 Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.

    Serve with ice, sliced lemons.

    Serves 6.
