Question:

I want an authentic chorizo and potato enchilada recipe!?

I know how to cook the chorizo, corn torts, chilis.......but I don't know the proper way to throw it all together. Sauce??

  1. I put my chorizo in a Teflon frying pan and chop it up like hamburger.........then I put a lid on it and let it steam cook.  I drain the grease off of the chorizo before adding anything else.  If it is too greasy then I put it in a paper towel and blot the grease off.

    I dice up potatoes with the skins on and boil them.  Lightly mix the cooked potatoes into the chorizo.  Put the lid on the pan on low and heat it through.  

    You can also beat some eggs in a bowl and for every egg add a tablespoon of water and beat.  I lightly scramble and fry this in a Teflon pan which has been sprayed with cooking oil.  Fold this into the chorizo and potato mix.

    You could layer this mixture between raw corn tortillas with shredded cheese and bake in a 350 oven covered for 45 minutes.

    Or spoon the chorizo mixture into the center of a flour tortilla......on top of the mixture add shredded cheese, onions, diced tomatoes, shredded lettuce and fold into a burrito.


  2. i fry my chorizo in one pan and deep fry the potatos and some carrots in another pan. combine them before the chorizo gets really brown. let the flavors meet fry them together a little more so the chorizo gets brown. i use red tortillas and i make enchiladas potosinas. i make a hot sause with jalepenos and tomatoes at the end i add freshly cut up cilantro and onion. or you can use just chiles in vinegar. put the tortilla in the hot oil just enough to heat it up but that its still soft. add the chorizo potatos and carrots next add some lettuce or cabbage some sliced onion and tomato, some mexican cheese and crema and the hot sauce or chile how ever you want. if all of this is to complicated just cook the potatos and chorizo how i said minus the carrots. and use just plain corn tortillas. its also good if you add a slice of onion to the chorizo to give it some flavor. you can email me if you have any more questions.
