I'm hungry for something fruity and sweet... I have three plums, and thats about it for fruit. Do you have any creative and yummy plum recipes?

  1. The Plum Upside Down Cake sounds awesome, but 3 plums doesn't equal 2 lbs I'm afraid!  Consider peeling and slicing the plums, then sauteeing them in butter and brown sugar.  Add a pinch of cinnamon and a dash of vanilla.  "Stew" until fruit is softened and thickened.  Pour over vanilla ice cream or serve with cookies or poundcake.


  2. Plum Upside-Down Cake

    Ingredients:

    1 stick (4 ounces) plus 5 tablespoons unsalted butter, softened

    1 cup brown sugar

    2 pounds red plums, halved

    1 1/2 cups flour

    3/4 cup granulated sugar

    2 teaspoons baking powder

    1/2 teaspoon salt

    2 large eggs, lightly beaten

    1/3 cup milk

    1 teaspoon pure vanilla extract

    Whipped cream, for serving

    Directions:

    1. Preheat the oven to 350°. In a deep, 10-inch, ovenproof skillet, melt 5 tablespoons butter over medium heat. Add the brown sugar and cook, stirring, until creamy. Remove from the heat and add the plums, skin side down, in a single layer.

    2. In a large bowl, combine the flour, granulated sugar, baking powder and salt. Stir in the remaining 1 stick butter until evenly distributed. Add the eggs, milk and vanilla and stir until smooth. Spread over the plums in an even layer.

    3. Bake the cake until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Let cool in the skillet for about 25 minutes, then run a knife around the edge and invert the cake onto a platter. Let cool for 20 minutes more before cutting into wedges. Serve with whipped cream.


  3. fresh plum cobbler

    3/4 cup sugar

    3 tablespoons cornstarch

    1/2 teaspoon ground cinnamon

    4 cups sliced fresh unpeeled plums

    1 teaspoon lemon juice

    3 tablespoons shortening

    1 cup Gold Medal® all-purpose flour

    1 tablespoon sugar

    1 1/2 teaspoons baking powder

    1/2 teaspoon salt

    1/2 cup milk

    Whipping (heavy) cream, if desired

    1. Heat oven to 400ºF.  

    2. Mix 3/4 cup sugar, the cornstarch and cinnamon in 2-quart saucepan. Stir in plums and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2-quart casserole; keep plum mixture hot in oven.

    3. Cut shortening into flour, 1 tablespoon sugar, the baking powder and salt in medium bowl, using pastry blender or crisscrossing 2 knives, until particles are size of fine crumbs. Mix in milk until mixture forms soft dough. Drop by 6 spoonfuls onto hot plum mixture.  

    4. Bake 25 to 30 minutes or until topping is golden brown. Serve warm with whipping cream.


  4. Purple Plum Pie

    "I can never resist a tart, tempting slice of this beautiful pie. It's a down-home dessert that makes any meal special. This pie is a terrific way to put bountiful summer plums to use."

    INGREDIENTS

    4 cups sliced fresh plums

    1/2 cup sugar

    1/4 cup all-purpose flour

    1/4 teaspoon salt

    1/4 teaspoon ground cinnamon

    1 tablespoon lemon juice

    1 (9 inch) unbaked deep dish pastry shell

    TOPPING:

    1/2 cup sugar

    1/2 cup all-purpose flour

    1/4 teaspoon ground cinnamon

    1/4 teaspoon ground nutmeg

    3 tablespoons cold butter or margarine

    Method

    1) In a bowl, combine the first six ingredients; pour into the pastry shell.

    2) For topping, combine sugar, flour, cinnamon and nutmeg in a small bowl; cut in butter until the mixture resembles coarse crumbs. Sprinkle over filling.

    3) Bake at 375 degrees F for 50-60 minutes or until bubbly and golden brown. Cover edges of crust during the last 20 minutes to prevent overbrowning. Cool on a wire rack.


  5. Spiced Plum Cake

    INGREDIENTS:

    1 egg

    1/2 cup honey

    2/3 cup white sugar

    1 teaspoon vanilla extract

    2 cups all-purpose flour

    1 teaspoon baking soda

    1/2 teaspoon ground cloves

    1/4 teaspoon ground cinnamon

    1 cup peeled and chopped

    plums

    1 cup chopped walnuts

    DIRECTIONS:

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

    2. In a large bowl, blend the egg, honey, sugar, and vanilla. Mix in the flour, baking soda, cloves, and cinnamon. Fold in the plums and walnuts.

    3. Transfer the batter to the prepared loaf pan, and bake 50 to 60 minutes in the preheated oven, until a toothpick inserted in the center of the loaf comes out clean.
