I want some good, light mexican food, any ideas?

Looking for some light mexican food. not the usual dark refrried beans and salty meet but some really light crisp refreshing stuff, perfect iwth a corona. any ideas?

  2. No such thing as light mexican food. It's all bad for you.

  3. Have a Corona with crispy salted tortilla chips and pico de gallo.  Here's the recipe.  Chop everything small.

    1 garlic clove

    2 roma tomatoes

    1/8 sweet onion

    cilantro leaves

    squeeze juice of 1/2  lime

    jalapeno peppers to make it mild medium or hot

    dash of salt.  Don't forget the chips are salted already.

  4. ok if you want to go to a resturant then go to either chipotle or el mesco not sure how to spell that one but anyway or if you wan somethin for home you should try fajitas with rice and beans lite and good

  8. I just made this last night.  It was so quick, easy, and surprisingly light!  We loved it.  

    You will need:

    1 tablespoon olive oil (I used extra virgin)

    1 pound of boneless skinless chicken thighs cut into small pieces

    1 pkg of Lawry's Chicken Taco Seasoning

    1 box of white corn taco shells (Make sure they a white corn because they are very thin and light).

    shredding ice burg lettuce

    diced tomato

    shredded Mexican cheese blend

    tomatillo salsa

    This is so simple.  Just heat your olive oil in your skillet until hot and add the chicken pieces.  Cook the chicken pieces until no longer pink, add the the taco seasoning along with half of cup of water.  Lower the temperature and let simmer until most of the liquid is gone. ( When using chicken, I like to used the premade taco shells, instead of making my own, because I don't like the grease).  Heat your oven to 350 and crisp up your shells for no longer than three minutes.  Place chicken in shells, and add toppings in this order.  1) shredded ice burg lettuce  2) diced tomato  3) shredded cheese  4) green salsa *

    * I used store bought because I could not find tomatillos, but here is an easy recipe:

    Ingredients: 5 medium-sized tomatillos, husks removed ¼ small onion 1 garlic clove 2 tablespoons fresh cilantro 2 jalapeños Salt to taste 1 tablespoon cooking oil

    Preparation: Chop the tomatillos and place them in the blender. Blend for 20 seconds or until smooth. Add the onion, garlic, cilantro, jalapeños and salt. Blend until smooth. Heat oil in a saucepan. Add the blended mixture. Bring to a boil and reduce heat. Simmer for five minutes. Serve. Note: Adjust the jalapeños according to your taste. For a mild salsa, use only one. Use more for a spicier salsa.

    This was the first time I have every used Lawry's Chicken taco seasoning or the white corn shells,  I found that the seasoning was perfect for my taste and the white shells were really light and crispy.  I found the green salsa was a much better match for chicken than the usual red.

  9. This is not crisp, but it is light: calabacitas.  It is made of squash, which is a very light vegetable.  But it makes a meal.

  10. Grilled chipotle glazed shrimp, fresh chunky salsa, slices of avacado, a few crumbles of fresh cheese (feta or queso fresca), salad greens.  Served with a fresh, warm tortilla
