  1. Papain is an enzyme that 'digests' or breaks down unnecessary proteins (e.g. tough meat fibers)... and leaves good meat alone...

    It's used in other places also.. like in hospitals for helping wounds heal... and for insect bites by breaking down the protein toxins in the insects venom.

The first fellow is right as a former chef it is a by product of the papaya fruit plant, the liquid enzymes in the fruit, as stated it breakdowns the fibers it the meats, allowing them to cook and become tender, it is the kind you use in a short time, as overdoing it will make the meat soft and mushy.

    It is used a lot with tough cuts of beef, but pineapple skins are a good alternative, it is not used much now a days was in the 70's and 80's.
